Episode: Quick Breads

10 tablespoons plus 1 teaspoon butter

1 cup mashed ripe bananas (about 2 large bananas)

1/2 cup sour cream

2 large eggs

1 1/2 teaspoons vanilla

2 cups cake flour

3/4 cup plus 2 tablespoons sugar

1 teaspoon baking soda

3/4 teaspoon baking powder

1/2 teaspoon salt

1 cup toasted, chopped walnuts

Preheat the oven to 350 degrees F.

Lightly grease a 9 1/4 by 5 1/4 by 2 1/2-inch loaf pan with 1 teaspoon of the butter.

Puree the bananas, sour cream, eggs and vanilla in a food processor.

Sift the cake flour, sugar, baking soda, baking powder and salt into the bowl of an electric mixer fixed with a whisk attachment. Add the remaining 10 tablespoons butter and mix on medium-low speed until blended, about 30 seconds. Add the banana mixture in 3 batches, scraping the sides of the bowl and mixing on medium speed between each addition. Fold in the nuts.

Pour into the loaf pan. Bake until lightly browned and bread bounces back to the touch, about 1 hour 10 minutes. Remove from the oven and cool for 10 minutes before turning out onto wire rack to cool completely.Any nice recipes for banana bread?

Fairtrade banana bread

Ingredients

225g/8oz self-raising flour

100g/4oz butter

150g/5oz caster sugar

450g/1lb Fairtrade bananas (the softer the better), peeled and mashed

陆 tsp salt

2 eggs

175g/6oz mixed dried fruit

Method

1. Pre-heat the oven to 180C/350F/Gas 4.

2. Mix all the ingredients except the dried fruit together. You can do this in a food processor or by hand in a basin.

3. When they're all thoroughly mixed, add the dried fruit. Spoon the mixture into a 1kg/2lb non-stick loaf tin, spread it out evenly and bake it for one and a half hours. The loaf is done when a skewer pushed into its middle comes out clean.

4. Cool on a wire rack, then slice before serving.

Banana bread

125g butter

175g unrefined soft brown sugar, eg, light muscovado

2 eggs

280g plain flour

1tsp bicarbonate of soda

Pinch of salt

125ml milk

3 medium ripe bananas, mashed

1tsp vanilla extract

75g walnuts, chopped

Heat oven to 180C/Gas mark 4. Lightly oil a 25cm x 11cm (10in x 4陆in) loaf tin.

Cream butter and sugar together in a food processor or with electric beaters, until smooth. Add one egg and beat well, add the second and continue to beat well. Sift in half the flour with the bicarbonate of soda and salt, and mix well. Mix in the milk, then the remaining flour.

Mash the bananas and then fold them in to the mixture with the vanilla extract and walnuts. Then tip the mixture into the loaf tin and level the top with a spatula.

Bake for around one hour until a skewer inserted in the middle comes out clean and not sticky. Cover the top with foil if it starts to brown too quickly.

Allow to cool in the tin for at least 20 minutes before turning out. To serve, cut into thick slices and serve warm or at room temperature.

6 oz Raisins

2 eggs

2 tblspns Honey

3 Bananas

Method

1. Rub butter and flour together until breadcrumbs.

2. Add sugar and raisins. Give a stir.

3. Beat eggs. Spoon out honey and stir in.

4. Mash Bananas and add to mixture.

5. Give it a good stir.

6. Grease loaf tin.

7. Pour in ingredients %26amp; cook at 180oc/350f for 1 hour.

8. Check to see if cooked (put skewer in and if it comes out clean it's ready!)

9. Turn out bread and leave to cool.
1 3/4 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/3 cup shortening

2/3 cup granulated sugar

2 eggs, well beaten

1 1/2 cups well mashed, overripe bananas (2 or 3 bananas)

1/2 cup coarsely chopped walnuts (optional)

Sift together the flour, baking powder, baking soda and salt. With the electric beater on low, fluff the shortening in a small bowl, until soft and creamy. Add the sugar gradually. Beat in the eggs in a slow stream.

With a fork, beat in 1/3 of the flour mixture, 1/2 the bananas another 1/3 of the flour mixture, the rest of the bananas then the last of the flour mixture. Fold in the walnuts. Turn into a greased and floured baking unit or a 2 1/2-quart mold and cover. Place on a rack in the crockpot. Cover the crockpot, but prop the lid open with a wooden pick or a twist of foil to let the excess steam escape. Cook on HIGH for 4 to 6 hours.

Cool on a rack for 10 minutes.

Serve warm.

Yields 4 to 6 servings.

What I usually do is put two medium sized bananas in the freezer until the skins go black, get 4oz of butter, sugar, and flour, 2 eggs. Mix butter %26amp; sugar together first, then add the eggs, then the flour, then blitz the bananas in a blender, add to the cake mixture, fold in with a bit of cinnamon and bake on gas mark 5 for 30 minutes, it comes out moist and perfect every single time. Enjoy, if you try it!

easiest and tastes great!
You have to put only banana on bread.%26amp; your banana bread is ready for eat.
The key to making good banana bread is using over ripe (black) banana's. Hope this helps
