Have you made zucchini bread in a bread maker/machine? Do you have recipes? Or is it better to just bake it?

it's a quick bread, almost like cake, so you don't need yeast, or the rising process that comes with. make it by hand, but if you have a food processor save some time and use that to grate the zucchini.

Zucchini Bread

3 1/4 cups all-purpose flour

1 1/2 teaspoons salt

1 teaspoon ground nutmeg

2 teaspoons baking soda

1 teaspoon ground cinnamon

3 cups sugar

1 cup vegetable oil

4 eggs, beaten

1/3 cup water

2 cups grated zucchini

1 teaspoon lemon juice

1 cup chopped walnuts or pecans

Preheat oven to 350 degrees F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes.Have you made zucchini bread in a bread maker/machine? Do you have recipes? Or is it better to just bake it?
Just bake it in the oven. Even if you use a bread machine to make the dough bread aficionados will tell you to bake the dough in the oven for the best results.Have you made zucchini bread in a bread maker/machine? Do you have recipes? Or is it better to just bake it?
This is a quickbread, so you only want to mix it in a bowl. Long kneading which a breadmaker provides is not needed...nor wanted. It's like Banana Bread, just mix and bake
beke it zucchini bread is supost to have chunks like bannana bread the machine will make it wierd

Quick white loaf

Makes 2 loaves

Preparation time 1-2 hours

Cooking time 30 mins to 1 hour

Ingredients

200g/7oz whole milk, at room temperature

150ml/5陆 fl oz water, at room temperature

2 tsp fresh yeast, crumbled

200g/7oz plain white flour

300g/10陆oz strong white flour

50g/2oz millet flakes (optional)

1陆 tsp fine sea salt

olive oil, for greasing

flour, for dusting

Method

1. Place the milk and water into a bowl. Add the yeast and whisk gently until dissolved.

2. Place the flours, millet flakes (if using) and salt into a clean bowl and mix together well.

3. Add the milk, water and yeast solution and mix together until it starts to come together a sticky, cohesive dough, then cover and leave for ten minutes.

4. Grease your hands and a flat clean surface with olive oil. Remove the dough from the bowl and knead for ten seconds, then form the dough into a smooth round ball. Wipe the bowl clean and grease with olive oil, then return the dough ball to the bowl and leave for a further ten minutes.

5. Remove the dough from the bowl and knead once more on the clean oiled surface. Shape again into a round smooth ball and return to rest in the bowl, covered, for one and a half hours in a warm (not hot) place.

6. Divide the dough into two equal pieces. Shape each into a ball and leave, covered, on a flat, floured surface for five minutes.

7. Place a clean tea towel onto a large tray and dredge with flour, rubbing the flour into the cloth to ensure even coverage.

8. Place one ball onto a floured work surface. To shape the dough, pat it flat into an oval 15cm/6in front-to-back and slightly longer left-to-right. Take the left and right sides and fold them inwards, towards the centre, by 2cm/1in, to leave a triangular point at the top. Next take the point and fold it in towards the centre, pressing down firmly to seal. Rotate the dough 180 degrees and repeat the process. Then rotate the dough back to its original position.

9. If you are right-handed fold the dough in half towards you, starting at the right-hand end, sealing the dough with the heel of your right hand while holding and folding the dough with your left hand. Roll the shaped loaf on the work surface, pressing down slightly more with the heel of each hand to give the ends a gentle point. Lift the dough and place it seam-side-up on the tea towel. Finally fold and pull the tea towel up the sides of the loaf and fold over to cover. Leave to rise for one and a half hours, or until almost doubled in height. Repeat this process with the second ball of dough.

10. Preheat the oven to 220C/425F/Gas 7.

11. Turn the two risen pieces of dough onto a flour-dusted baking sheet. Use a sharp knife to cut two or three slashes into the upper surface of each, then place into the oven to bake for 45 minutes, or until each loaf is a lovely golden brown.Good bread recipes please?????

Cooking Time: 45 minutes

350g strong white bread flour, plus a little extra

A simple, fragrant, fluffy, white home made recipe by hand would be as follows:

Ingredients:

White flour

active dry yeast

salt

sugar

strong hands, lots of counter space and a heavy pan similar to a cookie sheet in design.

proof your yeast first: One very warm, not hot, cup of water with about two tablespoons of yeast and a few sprinkles of sugar, roughly a half teaspoon then set aside to bubble and froth.

Move on to the other stuff now.

Take roughly 5.5 to 6 cups of flour, sprinkle with a bit of salt, mix in the proofed yeast/water mixture, mostly by hand and mix and fold and roll it onto a light sprinkling of flour, to prevent sticking to you and the counter. Your goal is to need until the dough becomes more pliable and smooth, this is very important, plus use very little flour so you dont mess up your dough and then roll it when its ready. put it into a well oiled bowl or pan big enough to cover with a dish cloth and enough space in the bowl for the dough to double in size. Put aside in a warm place free of drafts and cooling effects . Within an hour you should have a rising dough. Punch it down, and kneed it again, being carefull not to use to much extra flour, let it rise, form it into a ball or loaf or whatever...make mini loaves or whatever, set aside in draft free area again for about thirty minutes, spray pan lightly with pam, sprinkle with touch of flour and cornmeal, bake your rolls or bread at about 350 to 375 degrees until golden and hollow sounding when rapped on.

take it out of the oven, if you like a soft and chewier crust, cover or wrap bread in wet dish towels to soften the crust.

Best when eaten hot and fresh from the oven with lots of fresh creamery butter! Ad other stuff as you like!

This one is fabulous. The long, slow rise gives it a lot of flavor, and baking in a cast-iron dutch oven gives it a nice crisp crust. Mix it up before you go to bed at night, then bake for dinner the next day. Watch the video linked at the end of the article.

Can u help me? any one of u have Taiwanese bread recipes?if u have can u share w me.thx u?

Taiwanese Bread

1 Yield:

Ingredients:

500 gm Bread flour

2 1/2 gm Ascorbic Acid (optional)

175 gm Iced Water

7 1/2 gm Dry instant yeast

5 gm Salt

100 gm Sugar

50 gm Butter

50 gm Shortening

30 gm Fresh Milk

100 gm Egg yolks

Method:

1. Using part of the water from the recipe, combine it with the yeast and 50 grams of the sugar. Set aside.

2. Using the dough hook attachment of your machine mix together the bread flour and remaining sugar.

3. Pour in the yeast mixture, continue mixing at slow speed. Add water and milk in a thin stream until mixture looks completely wet. Add more water as necessary.

4. Increase the speed and add in the butter and shortening in pieces until mixture looks completely lubricated. Add egg yolks then the salt. Continue mixing at high speed until dough leaves the sides of the bowl clean.

5. Continue mixing until gluten is developed. Test the dough by getting a small piece and stretching it, it should not break easily and should feel elastic. The dough will be VERY sticky.

6. Rest the dough in a large greased bowl (turning dough once to grease top). Cover with plastic. Do not disturb for about 30 minutes.

7. At this point you can shape the dough into anything you want. For Filipino Ensaimada: Divide the dough into two. Divide each half into 50 gram pcs. Roll up each dough tightly into a bun. Place in a greased tray, cover with greased plastic and set aside for 10 minutes. Roll each dough into a rectangle and slather generously with butter. Cover the entire surface with grated cheese (edam works excellently) and roll up on the long side into a thin baton. Coil this baton into a tight cinnamon bun shape and place in round, greased fluted molds OR in large muffin tins. Butter the tops and set aside to let it rise until double. This might take between 1 to 2 hours (depending on the temperature of your kitchen - for faster rising, place inside an empty cabinet).

8. Just before baking brush tops GENTLY with egg beaten with a few tablespoons of water. Bake in a preheated 400 degree F oven for approximately 18 to 25 minutes. Tops should be just golden. Because the dough is so rich the bread will turn brown easily.

9. Remove immediately to cooling racks. Brush with more butter and sprinkle with a little sugar and more grated cheese.

NOTES : This is my first time to post in this list, so please bear with me :) I don't own a bread machine and usually just bake bread by hand when I'm at home. I used to work for a food ingredients company that sells (among other things) bread improvers for the local baking industry.

This recipe was a favorite of ours and I've scaled it down considerably. I don't know how to make it in a bread machine, but for those with a Hobart mixer, there should be no problems with it. I've demonstrated this bread many times and people usually ask me for the recipe. It's very versatile and can be shaped into almost anything you wish, plus, the dough, although very rich, can accommodate addition of other ingredients.

Does anyone have any recipes that are gluten and yeast free for a bread machine? Please help!?

I need a recipe that is candida-friendly. There has to be one out there!Does anyone have any recipes that are gluten and yeast free for a bread machine? Please help!?
The gluten free is tricky because gluten is in most flours. I think potato flour is probably safe, so sub that for a wheat flour. Note that this will not work as well for a yeast bread since the gluten is part of what helps the yeast to rise.

In terms of yeast free, you'd want to go for a soda bread. The baking soda will do the job of the yeast by fizzing and creating air pockets. Thing with soda breads is that they don't need all the kneading and rising times of a yeast bread, in fact, that will make it dense, hard, and tough. As a result, it won't be suitable for a bread machine unless you have a way to bypass the automatic kneading and rise times as it mixes.

In short, many bread machines are made for a yeast bread, and so will not work for any non-yeast bread.Does anyone have any recipes that are gluten and yeast free for a bread machine? Please help!?

    Tricolor Braid

“This impressive loaf is wonderfully dense and chewy,” says field editor Cindi Paulson of Anchorage, Alaska. It takes some time to prepare, but the results are worth the extra effort.

    Ingredients:

2 packages (1/4 ounce each) active dry yeast

    2-1/3 cups warm water (110° to 115°)

    1/4 cup butter, softened

    2 tablespoons honey

    3 teaspoons salt

    3-1/3 to 3-2/3 cups all-purpose flour

    WHEAT DOUGH:

    2 tablespoons toasted wheat germ

    2 tablespoons molasses

1 cup plus 2 to 5 tablespoons whole wheat flour

    PUMPERNICKEL DOUGH:

    2 tablespoons baking cocoa

    2 tablespoons molasses

1 cup plus 2 to 5 tablespoons rye flour

    1 egg white

    1 tablespoon water

    Directions:

In a large bowl, dissolve yeast in warm water. Add butter, honey, salt and 2-1/3 cups flour; beat for 2 minutes. Divide evenly among three bowls.

To the first bowl, add enough remaining all-purpose flour to make a stiff dough; mix well. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and set aside.

Add wheat germ and molasses to the second bowl; mix well. Gradually add enough wheat flour to make a stiff dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and set aside.

Add cocoa and molasses to the third bowl; mix well. Gradually add enough rye flour to make a stiff dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover. Let all three bowls rise in a warm place until doubled, about 1 hour.

Punch doughs down; divide each in half. Shape each portion into a 15-in. rope. Place a rope of each dough on a greased baking sheet and braid; seal ends. Repeat with remaining ropes. Cover and let rise until doubled, about 45 minutes. Beat egg white and water; brush over braids.

Bake at 350° for 25-30 minutes or until golden brown. Remove to wire racks to cool. Yield: 2 loaves (12 slices each). Editor's Note: Use all-purpose flour on kneading surfaces for all three doughs.
