ok so going from dry yeast (professional dry instant yeast- 96% yeast) to fresh...





dry yeast DIVIDED BY .3333 = how much fresh yeast you need





how much fresh yeast you need MINUS dry yeast originally called for = how much water to subtract from total recipe





fresh yeast is 30% water, so you need to account for the extra water you are putting into your recipe when you put in the fresh yeast, thats why you need to calculate water to subtract from the recipe.

You need to 'proof' the yeast... put some warm water (100 deg. F) in a glass and add a tablespoon of sugar, the sprinkle the yeast on top of the water and mix it in. Once you get an active yeast going, you pitch it in the bread dough.





By ';fresh yeast'; do you mean LIQUID YEAST? That is an active yeast that can be used with known effects.. but for the average home baker, the proofed dry yeast will work quite nicely.
Usually one packet per loaf of bread. What you do is put the yeast in the water for a few minutes before mixing it into the flour. This wakes it up or causes it to ';bloom';. Other than that there is no difference between the two.
The instructions on the yeast box will be, the best guide. Also if the yeast is 'quick action' it will not have to be mixed with water but mixed dry with the flour.
lol just had to look this up yesterday myself. 1 pkg of dry yeast (2.1/4 tsp) = 25 gr. fresh yeast so i hope you have a scale

Mushroom Zucchini Frittata








4 small zucchini unpeeled


2 T. olive oil


2 T. butter


1 C. fresh sliced mushrooms


4 eggs well beaten


1/2 t. salt


1/3 C. grated parmesan cheese





Shred the zucchini. Place it in a paper towel and squeeze out any excess moisture.


Heat oil in a 10 inch skillet. Saute the mushrooms briefly, then add the squash. Cook until the squash is barely tender, about 4 minutes.


Pour eggs over vegetables. Stir once quickly to coat vegetables. Cook over low heat until eggs begin to set. Sprinkle with the parmesan cheese.


Place under the broiler until cheese browns. Let set for 2 - 3 minutes. Cut into wedges and serve.


Serves 4.








Zucchini Stuffed with Feta Cheese and Roasted Red Peppers








2 6 oz. zucchini


1/3 C. finely chopped roasted peppers


1/2 C. finely chopped feta cheese


1/8 t. dried oregano


freshly ground black pepper





Cut zucchini into 3/4 inch crosswise sections. Scoop out the center with a melon baller. Do not go all the way through, you are forming a cavity for the center.


In a steamer set over simmering water steam the zucchini shells, covered, 4 minutes, or until barely tender but still bright green. Transfer shells to a paper towel towel and drain upside down.


Stir together the roasted pepper, feta cheese, oregano and pepper. in a small bowl. Mound a small amount in each shell. Arrange zucchini's in a lightly oiled, shallow ovenproof dish and broil about 4 inches from the heat until bubbling and beginning to turn golden brown, about 4 minutes.


Makes about 16 pieces.








Best Zucchini Appetizer





INGREDIENTS:


3 cups sliced zucchini


1 cup all-purpose baking mix


1/2 cup chopped onion


1/2 teaspoon salt


4 eggs, beaten


1/2 cup shredded Cheddar cheese


1/2 cup vegetable oil


1 clove garlic, minced





DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.


In a large bowl, mix zucchini, all-purpose baking mix, onion, salt, eggs, Cheddar cheese, vegetable oil and garlic.


Spread zucchini mixture into the prepared baking dish. Bake in the preheated oven 25 minutes, or until bubbly and lightly browned. Cut into bite-sized pieces to serve








Cheesy Zucchini Dip





INGREDIENTS:


3 cups shredded zucchini


2 cups shredded Cheddar cheese


1/3 cup shredded mozzarella cheese


1 1/2 cups mayonnaise


1/4 cup sour cream


1 cup chopped pecans


1/4 cup finely sliced red bell pepper


salt and pepper to taste





DIRECTIONS:


In a medium bowl, mix together zucchini, Cheddar cheese, mozzarella cheese, mayonnaise, sour cream, pecans, red bell pepper, salt and pepper. Chill in the refrigerator at least 1 hour before serving.








Zucchini-Cheese Appetizer Squares








INGREDIENTS:


8 tablespoons grated Parmesan cheese


1/2 cup vegetable oil


1/2 cup sesame seeds


1 onion, chopped


1 clove garlic, minced


2 1/2 cups grated zucchini


6 eggs, beaten


1/3 cup dried bread crumbs


1/2 teaspoon salt


1/2 teaspoon dried basil


1/2 teaspoon dried oregano


1/4 teaspoon ground black pepper


3 cups shredded Cheddar cheese





DIRECTIONS:


Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13 inch pan and sprinkle with 3 tablespoons of Parmesan cheese.


Place 1/2 tablespoon vegetable oil in a medium size frying pan, heat on medium-high. Add sesame seeds and stir constantly until seeds are lightly browned.


In a large mixing bowl, combine vegetable oil, onion, garlic, zucchini, eggs, bread crumbs, salt, basil, oregano, pepper and Cheddar cheese; stir until well combined. Press mixture into prepared baking pan. Sprinkle Parmesan cheese and sesame seeds over the zucchini mixture.


Bake 30 minutes or until set when lightly touched in the center. Let cool at least 15 minutes before cutting into 1 inch squares.








Zucchini Parmesan Appetizer








INGREDIENTS:


3 pounds zucchini, cubed


5 tablespoons unsalted butter, divided


1 large onion, chopped


4 garlic cloves, minced


2 eggs, beaten


1/2 cup freshly grated Parmesan cheese


1/2 cup fresh white bread crumbs


1/4 cup chopped fresh basil leaves, packed


salt and pepper to taste





DIRECTIONS:


Preheat oven to 375 degrees F (190 degrees C).


Place zucchini in a pot with about 1 inch of water. Bring to a boil, and cook until tender but still firm, about 10 minutes. Drain zucchini and transfer to a large bowl. Mash with a fork, then transfer to a fine mesh strainer or sieve, pressing to release excess water. Return to mixing bowl.


Melt 4 tablespoons butter in a large skillet over medium-high heat. Add onion and garlic, and cook until lightly browned being careful not to burn the garlic. Remove from heat, stir into the zucchini. Mix in the eggs, Parmesan cheese, bread crumbs, and basil. Season with salt and pepper.


Butter an 8 inch square baking dish with remaining butter. Pour the zucchini mixture into the dish, and spread evenly. Bake in the preheated oven until firm in the center and lightly browned on top, about 45 minutes. Allow to cool, cut into squares, and serve.











Zucchini Corn Fritters





INGREDIENTS:


2 cups all-purpose flour


1 tablespoon baking powder


1/2 teaspoon cumin


1/2 cup sugar


1/2 teaspoon salt


fresh ground black pepper


2 eggs, beaten


1 cup milk


1/4 cup butter, melted


2 cups grated zucchini


1 1/2 cups fresh corn, kernels cut from cob


1 cup finely shredded Cheddar cheese


oil for frying





DIRECTIONS:


In a large bowl, stir together flour, baking powder, cumin, sugar, salt, and pepper.


In a small bowl, whisk together eggs, milk, and butter. Whisk wet ingredients into dry ingredients. Stir in zucchini, corn, and cheese; mix well.


Warm oil in a cast iron skillet over medium-high heat. Drop batter by the tablespoonful into hot oil. Fry until crisp and brown, turning once with tongs. Remove to paper towels.I have tons of zuccini this year. Does anyone have any interesting recipes other than bread?
Fried zuccini, coat slices in milk then dip in coarnmeal and fry in canola oil...serve with ketcup.

You can make a great relish or what is called Chow Chow. Also, great in stew, even with out meat if you want to go vegetarian.
Brown some sausage or hamburger in a skillet and drain off all the grease. Then rinse in a colander to get more of the grease off. Put back into the skillet and top with sliced zucchini, sliced sweet onion, sliced tomatoes and sprinkle with italian seasoning, salt and pepper. Cover and simmer for 20 minutes then top with grated cheddar and simmer covered till the cheese starts to melt. It tastes like a pizza without the fatening crust.

Hi Monika! There's a recipe that i like to do with zuchini and it really taste good,for me i take hamburg,rice,chopped onion,crush soda crackers about 12,1 egg,salt,pepper and mix all the ingredients in bowl after that i cut my zuchinni in two ,then i empty the inside of the zuchinni with a spoon and after that i put my meet into the zuchinni take a can of tomatoe juice and pour it onto the meat and i put a can of tomato soup and after i done that i put it in the oven at 350 degree celcius and put them to cook for about 1 hour and a half or until the meat is well done and for a little more tastier i put mozarella cheese on top of it and it give you a main dish with one zuchinni you can make 4 portions to eat if you cut back the half of it in two pieces again so i hope you'll like my recipes and hope you'll give it it a try good luck and have i nice day from Brigitte G (bizcatblue@yahoo.ca).

6 cups arugula


4 (4-ounce) cooked steaks, sliced


1/3 cup thinly sliced red onion


1 green bell pepper, seeded and thinly sliced


1/4 cup fresh lemon juice


3 tablespoons olive oil


1 tablespoon honey mustard


1 teaspoon finely grated lemon zest


Salt and ground black pepper


1/2 cup shaved Parmesan (use a vegetable peeler to shave a block of cheese)





Arrange arugula on a serving platter. Top with steak slices, red onion and bell pepper.


Combine lemon juice, olive oil, honey mustard, and lemon zest. Season, to taste, with salt and black pepper. Toss with salad greens. Top with shaved Parmesan just before serving.





CHICKEN


1/4 cup extra-virgin olive oil, eyeball it


1 1/2 pounds boneless skinless chicken thighs, chopped into bite-sized pieces


1 onion, thinly sliced


3 cloves garlic, grated or chopped


1 cup shredded carrots


1 fresh bay leaf


1 teaspoon smoked paprika


1 teaspoon ground cumin


1 teaspoon coriander


Pinch ground cinnamon


Salt and freshly ground black pepper


3/4 cup chopped dried fruits - pick 1 or combine: figs, pitted dates, apricots, sultanas


1 lemon, zested and juiced


3/4 cup pitted mixed olives, chopped


4 cups chicken stock, divided


2 tablespoons butter


3 tablespoons pine nuts


1/4 cup slivered or sliced almonds


1 1/2 cups couscous


Handful flat-leaf parsley, chopped








Heat the extra-virgin olive oil in a deep skillet over medium-high heat. When the oil ripples add the chicken and brown 3 to 4 minutes on each side. Add the onions, garlic, carrots, bay leaf and season with spices, salt and pepper, cook 5 to 6 minutes. Stir the fruits into the chicken and vegetables, add the zest of the lemon, olives and 2 1/2 cups of stock. Reduce heat to low and simmer 10 minutes more. Sprinkle with lemon juice and turn off heat. Remove bay leaf.


While chicken simmers, melt butter in a sauce pot over medium heat. Add nuts and lightly toast for a couple of minutes. Add 1 1/2 cups stock and bring up to a boil then stir in couscous. Cover and let stand 5 minutes.





Serve chicken over couscous, or vice versa, and garnish with parsley.





(NOTE: If you can't have couscous, serve over mixed greens or with veggies)





FISH


4 teaspoons olive oil, divided


4 (5-ounce) sea bass fillets (or other white fish)


1 small onion, diced


1/2 cup white wine


1 cup canned low-sodium diced tomatoes, with juice


1/2 cup chopped pitted black olives


2 tablespoons capers


1/4 teaspoon dried crushed red pepper, optional


2 cups packed fresh baby spinach leaves


Salt and pepper





In a large nonstick skillet heat 2 teaspoons of oil over a medium-high heat. Add fish and cook until opaque in the center, about 2 1/2 minutes per side. Transfer the fish to a platter and tent with foil to keep the fish warm.


Heat the remaining 2 teaspoons of oil in the same skillet; add onion and saute for 2 minutes. Add the wine and cook until reduced by half, about 2 minutes. Add the tomatoes, olives and capers and crushed red pepper, if using, and cook for 3 minutes more. Stir in the spinach and cook until it is wilted, about 3 minutes. Season with salt and pepper. Spoon the sauce over the fish and serve.

';Spaghetti'; Squash


1 (3-pound) spaghetti squash, split in 1/2 lengthwise


1 recipe Roasted Garlic Pesto, recipe follows


1/4 cup Parmesan





Preheat oven to 350 degrees F.


Reserve half of the squash for another use. Place 1 spaghetti squash half, cut side down, on a nonstick baking sheet. Roast for 30 to 40 minutes or until tender. Remove flesh from skin with a fork. Toss with the roasted garlic pesto. Top with Parmesan and serve warm.

4 heads garlic


4 sprays olive oil cooking spray


2 cups fresh basil leaves


1 teaspoon pine nuts

I absolutely love pita bread and want some fresh recipes to try! I love any type of vegetable and love creative, new tastes to stuff into those pitas.

Spinach and loooots of cheese -- try a few different kinds of cheese.








I know it sounds horrid to most people, and it did to me, at first, as well -- I've always hated spinach -- but tastes a lot like spanikopita, a Greek dish I looove.











I also love the combination of mozzerella / provolone cheese and black olives. Mm.








As a kid, I was crazy about macaroni and cheese -- but it was hard to take with me for school lunches -- silverware, dish to put it in, etc. However, putting it inside a pita solved that. You could do it with most kinds of pasta -- in fact, I did it once with spaghetti. If you mix a little garlic and butter, spread it on the pita, grill it for a few minutes, then fill it with marinara and some type of small pasta, it's great.








Another good one is crab salad. (I don't know whether you consume seafood or not; some veg do, some don't).








Then of course there's the ever-popular peanut butter and jelly combination.








Also, one thing you might try -- I never have, but I've heard of doing it -- is fruit fillings. I don't know how it would taste with pita, but I imagine it can't be too bad. I'd go with some type of pie filling -- even the canned type would do -- brush on a little butter, and bake it until hot.Any vegetarian filling recipes for pita bread?
My wife makes egg salad and puts it in the pita pocket with fresh spring mix, alfalfa sprouts, red onion. I get two haves for lunch. it packs well in foil and I take it to work. Very inexpensive!
Try filling it with sesame butter (Whole Foods sells it) and peach preserves.


Or this mix: steamed green beans and shopped cherry tomatoes with goat feta cheese crumbles (if you can have dairy) and a touch of home made vinaigrette dressing.
I like lettuce, sprouts, tomatoes, provalone cheese and deli style mustard. Also, make your favorite salad mix with the dressing and serve inside warm pita bread (Wendy's used to make these they were so good!)

    Falafel


    32 ounces chickpeas -- 2 cans


    1 clove garlic


    1/2 cup whole wheat flour


    1 tablespoon seasoning salt


    3 dashes tabasco


    4 flat greek syle pitas


    1/2 cup tahini





    TAHINI


    1/2 cup tahini paste


    1 teaspoon garlic salt


    1 teaspoon lemon salt


    1 teaspoon vinegar


    1/2 cup italian dressing





    Grind all ingredients for Falafel in a food processor until it is a course meal and holds together when formed in balls (Add more flour if too watery) Deep fry falafel balls in oil. Steam pitas (I do this in the microwave with a mug of water)





    Tahini: mix together 1/2 cup tahini paste, 1 tsp garlic salt, 1tsp lemon salt, 1tsp vinegar and 1/2 cup italian dressing in food processor until liquified (if too thick add water)

    Oh, hummus is a good idea! I'm a nanny, and for one of the families that I babysit for, the mom likes to try new things and makes me try them when I'm over there and that's how I started liking hummus. But what she does is, she takes the pita bread and puts the hummus like you would with mayo and then she takes roasted eggplants and roasted bell peppers and eats it like that. I am a vegetarian and she knows that so when I'm over there she tries to make me food that I would love but normally wouldn't eat, and now I try to eat hummus as much as possible cause it's sooooo yummy!!!
    I am not a vegetarian. But my daughter and daughter in law both were for a good long time so I learned vegetarian stuff for them. I'm pretty good at it.


    Mushrooms suateed with onions or Leeks and some nuts. They liked the Pecans but Pine Nuts were good too. Shrooms are hearty and filling and some nuts give a satisfying crunch. I can even do some good stuff with Tofu.
    Tomatoes, cucumbers, alfalfa sprouts, bean sprouts, mushrooms, cherry tomatoes, sliced peppers (sweet or hot), olives, sweet pickles, etc.., the list is endless.

    FRENCH TOAST BREAD PUDDING BRUNCH





    5 eggs, beaten


    3/4 cup milk


    1 tablespoon McCormick庐 Pure Vanilla Extract


    1/4 teaspoon baking powder


    1 loaf French bread, cut into 8 (1-inch) slices


    1 cup golden raisins


    1 tablespoon rum


    1/2 cup dark brown sugar


    McCormick庐 Cinnamon Sugar





    Combine eggs with milk and baking powder. Add vanilla extract.


    Soak bread in mixture for several hours or overnight, turning once so that both sides are covered. Cover and refrigerate until ready to use.





    Soak raisins in 1 tablespoon rum for 15 minutes (warm water may be substituted). Discard rum. Sprinkle raisins with enough Cinnamon Sugar to lightly coat. Butter a 13x9 inch baking pan. Sprinkle brown sugar evenly across bottom of pan. Sprinkle raisins on top of brown sugar.





    Preheat oven to 450掳F. Scoop soaked bread over brown sugar. Sprinkle with Cinnamon Sugar.





    Bake for 25 minutes or until golden brown. Allow to cool 15 minutes before serving. Cut into squares and serve with a pat of butter.








    21'; CLUB RICE PUDDING





    1 quart milk


    1 pint heavy cream


    1/2 teaspoon salt


    1 vanilla bean, split


    3/4 cup long grained rice


    1 cup granulated sugar


    1 egg yolk


    1 1/2 cups whipped cream


    raisins (optional)





    In a heavy saucepan, mix together milk, cream, salt, split vanilla bean and 1/2 of the sugar and bring to a boil. Reduce heat.


    Stir in the rice and simmer, covered, over very low heat for 1 1/2 hours until Rice becomes tender. allow to cool and remove the vanilla bean. stir in remaining sugar and the yolk of one egg.





    Stir in whipped cream, reserving two tablespoons. scoop pudding into individual ovenproof serving dishes or one large souffl茅 dish. Stir in raisins, if desired.





    Preheat broiler.





    Spread a thin layer of the reserved whipping cream on top, and broil until the pudding is browned lightly. Chill several hours before serving.Does anyone have any good rice pudding or bread pudding recipes????

    Blueberry Bread Pudding


    1 tablespoon cornstarch


    10 package Diet sweetener (1 gram each)


    1/2 teaspoon grated orange peel


    1 pint blueberries, washed, stem, sort


    juice of 1/2 lemon


    4 slices stale diet bread, (white)


    1 tablespoon diet margarine, softened


    1/2 cup evaporated skim milk





    Combine the cornstarch, sweetener and orange rind,


    pressing out all the lumps.


    Dump the blueberries into a 6 cup shallow casserole


    that has been lightly sprayed with non-stick vegetable


    cooking spray.


    Dump the sugar mixture, add the lemon juice


    and toss well to mix.


    With a potato masher, lightly mash the blueberries,


    set aside.


    Butter the bread slices lightly on one side,


    stack the slices and cut into 1/2 '; cubes.


    Dump into the casserole and toss well to mix.





    Bake the pudding at 350 F for 30 minutes, remove from oven,


    add the evaporated milk and stir well to mix.





    Return to the 350 F oven, and bake for 15 minutes more,


    uncovered. Serve warm, topped, if you desire, with a little whole milk.





    Cappuccino Bread Pudding


    4 ounces brewed espresso or strong coffee


    4 large egg yolks


    1/3 pound (1 inch cubes) day old brioche (bread)


    6 large eggs


    24 ounces half and half


    2 ounces sliced almonds (optional)





    Caramel Sauce


    3 3/4 ounces sugar


    2 ounces water


    6 ounces heavy cream


    2 tablespoons unsalted butter





    Method





    In a small saucepan, combine espresso or coffee and 2


    tablespoons of sugar.


    Boil until reduced to about 1/4 cup.


    Cool syrup.


    In a large bowl, whisk together whole eggs, egg yolks and


    remaining 1/2 cup sugar, half and half and syrup.


    Spread bread cubes in a 9 inch square baking dish and


    sprinkle with almonds if using.


    Pour custard over bread, making sure all bread cubes are


    covered.


    Let stand for 30 minutes. Put baking dish in a larger pan


    and add enough water to pan to reach halfway up sides of


    baking dish. Bake in middle of oven at 325 F for 55 minutes


    or until golden brown. Serve with warm caramel sauce.





    Caramel Sauce


    In a small, heavy saucepan combine sugar and water and


    bring to a boil, stirring until sugar is


    dissolved. Boil syrup, without stirring but swilling pan


    occasionally, until deep golden caramel.


    Remove from heat and add cream slowly (mixture will


    bubble up). Cook sauce over low heat, stirring


    until smooth and caramel is dissolved. Add butter and


    stir until melted.








    Chocolate Chip Bread Pudding


    5 tablespoons butter


    2 cup hot milk


    1 teaspoon vanilla


    1/3 cup dark brown sugar


    2 eggs


    1/8 tsp. salt


    2 cups cubed white bread, with crusts removed


    6 oz. chocolate chips





    Heat butter, sugar and milk together. Add eggs, vanilla and salt. Grease a 1鈭抭uart baking dish. Place bread and chocolate chips in baking dish. Pour egg mixture over bread and chips. Cover with plastic wrap and let stand in the refrigerator 5 hours. Place in larger pan of water in a 350F oven and bake for 45 minutes or until brown on top.











    Rice Pudding


    3/4 cup uncooked white rice


    2 cups milk, divided


    1/3 cup white sugar


    1/4 teaspoon salt


    1 egg, beaten


    2/3 cup golden raisins


    1 tablespoon butter


    1/2 teaspoon vanilla extract








    1. In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.








    2. In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm. For creamier pudding, use short or medium grain rice.








    Indian Rice Pudding (Kheer)


    2 c Water


    1 c Rice


    5 c Coconut milk


    1 1/4 c Sugar


    1/2 ts To 1 ts ground cardamom


    pn Salt


    1 ts Vanilla extract





    Bring the water to a boil in a medium saucepan. Add the rice, cover, reduce heat to low and simmer until the liquid is absorbed, about 18 minutes. Add the coconut milk, sugar, cardamom and salt. Simmer, uncovered and stirring frequently, over medium heat until thickened, about 20 minutes. Remove from heat and stir in vanilla. Pour the pudding into individual bowls. Serve warm or chilled.string beans are coated with garlic and sesame seeds.

    I bought way more cherries that I can possibly eat before it goes bad, so I am looking for some kind of dessert recipe or breakfast bread recipe that I can use them up in.     This is actually based on a recipe for ';meggyes lep茅ny'; from Horv谩th Ilona's _Szak谩csk枚nyv_, translated into American quantities. I usually make it with morello (sour) cherries from a jar, but it should work perfectly well with sweet cherries.





    2 sticks butter (unsalted)


    4 eggs, separated


    3/4 cup sugar, divided


    1 1/2 cups flour


    1 1/2 lbs cherries, pitted, or 1 jar morello cherries, drained





    Preheat oven to 350 degrees.


    Cream the butter with half the sugar, then add the egg yolks one at a time. In a separate bowl, beat the egg whites with the remaining sugar until stiff and shiny, then fold them into the butter mixture. Add the flour and mix just until well blended. Spread the batter evenly into an oblong baking pan (10x13 inches or thereabouts, either nonstick or greased), and scatter or arrange the cherries on top. Bake about 40 minutes (check at 30 minutes), until golden. Can be served warm or cooled.

    The milk powder will increase the general flavor/richness of the bread. The other property that it has is lactic acid. Lactic acid will break down the gluten bonds; this in turn creates a tender piece of bread.





    In order to sub, you will need to find something that will be acidic enough to break down developing gluten. You will also need to make sure to increase your flour to compensate for the loss of the milk powder.To make a kosher bread in bread-maker for most recipes I need to change milk powder by something.Any idea?
    Easy. Use water.
    Simply use water. I do it all the time, not because of kosher.
    Kosher Soy Milk?
    The milk's only purpose in bread is to create a more tender crumb; it has no other structural or significant flavor function.





    Just leave the powder out of the recipe, and it will be fine. If you want to maintain the tenderness that the milk offers, increase the fat just slightly.





    All bread really needs is flour, water, salt, and (except during Passover) leavening.

    If you are using active dry yeast, follow the instructions on the packet to active it (see the note on yeast above). Otherwise, mix the yeast in with the flour, salt, and sugar. Add the olive oil and 1 1/4 cup water and stir together with a wooden spoon. All of the ingredients should form a ball. If some of the flour will not stick to the ball, add more water (I had to add an extra 1/4 cup).





    Once all of the ingredients form a ball, place the ball on a work surface, such as a cutting board, and knead the dough for approximately 10 minutes (or until your hands get tired). If you are using an electric mixer, mix it at low speed for 10 minutes.





    (The purpose of kneading is to thoroughly combine the ingredients and to break down the flour so that the dough will become stretchy and elastic and rise well in the oven. A simple hand kneading technique is to firmly press down on the dough with the palm of your hand, fold the dough in half toward you like you are closing an envelope, rotate the dough 90 degrees and then repeat these steps, but whatever technique you are comfortable using should work.)





    When you are done kneading the dough, place it in a bowl that has been lightly coated with oil. I use canola spray oil, but you can also just pour a teaspoon of oil into the bowl and rub it around with your fingers. Form a ball out of the dough and place it into the bowl, rolling the ball of dough around in the bowl so that it has a light coat of oil on all sides. Cover the bowl with plastic wrap or a damp kitchen towel and set aside to rise until it has doubled in size, approximately 90 minutes.





    When it has doubled in size, punch the dough down to release some of the trapped gases and divide it into 8 pieces. Roll each piece into a ball, cover the balls with a damp kitchen towel, and let them rest for 20 minutes. This step allows the dough to relax so that it'll be easier to shape
    Grilled/ baked chicken, then make a salad w/ cut tomatoes and cucumbers w/ yogurt, lemon juice, and dill (salt and pepper). Toast the pita and stuff it, maybe add a little hummus

    1/2 cup water, warm


    1 cup sourdough starter


    2 1/4 cup bread flour


    1 tablespoon sugar


    1 tablespoon oil


    1 teaspoon salt

    Place ingredients in order into machine or follow manufacturer's directions.





    BREAD MACHINE BREAD





    Quantities for a bread machine.





    3 1/2 c. flour (Gold Medal general purpose)


    2 tsp. canola oil


    1 heaping tbsp. honey


    3/4 tsp. salt


    1 pkg. dry yeast


    Warm water (see below for amount)





    Add honey to a 2 cup measuring cup. Then add canola oil, salt and yeast. Add enough warm water to bring contents of measuring cup to 1 1/2 cup mark. Mix to dissolve yeast and let stand 5 minutes.


    Place the 3 1/2 cups flour in machine baking pan, add contents of measuring cup and press selection for French Bread.





    Five minute before second kneading ends (machine will signal) add a total of one cup of any combination of the following to suit your taste.





    Whole unsalted sunflower seeds.





    Chopped dried fruits: apricots, figs, dates, apple, peach, pear, prunes, raisins.

    Take pita bread and split them in half. Butter a muffin tin and push one half into each, being careful not to rip them. (microwaving first helps too) Place bacon bits or salsa or whatever flavouring you like at the bottom, I also use shredded cheese. THen crack two eggs into each and place in the oven until the eggs are cooked.
    How about a scrambled egg with a bit of cheese and some salsa stuffed in the pocket! Sounds like a good dinner too.

    Pinch freshly grated nutmeg

    5 tablespoons banana liqueur


    2 cups mashed ripe bananas, about 4 small


    3/4 cup chopped walnuts, toasted


    Buttery Rum Sauce, recipe follows


    Whipped Cream, for garnish


    Fresh mint sprigs, for garnish





    Preheat the oven to 350 degrees F.





    Lightly grease a 9 by 13-inch baking dish with 1 tablespoon of the butter and set aside.





    Place the cubed bread in a large mixing bowl. In a small saucepan, melt 4 tablespoons of the butter over medium heat and pour the butter over the bread cubes. Using a rubber spatula, toss to evenly distribute the butter.





    Combine the cream, milk, eggs, brown sugar, granulated sugar, vanilla, cinnamon, nutmeg, salt, and banana liqueur in a medium mixing bowl, whisking to combine. Pour the cream mixture over the bread cubes and stir to combine. Let sit for 30 for 45 minutes, or until the bread is soft and has absorbed most of the liquid.





    Stir in the mashed bananas and walnuts. Pour the mixture into prepared dish and bake, uncovered, for 45 to 50 minutes, until the top is golden brown and crispy and the pudding is firm in the center. Prepare the Buttery Rum Sauce while the pudding is baking.





    Remove the pudding from the oven and cool on a wire rack for 15 minutes before serving. Serve warm with Buttery Rum Sauce and whipped cream, if desired.





    Buttery Rum Sauce:


    8 tablespoons unsalted butter, melted


    3/4 cup heavy cream


    1 cup sugar


    2 egg yolks, beaten lightly


    1/3 to 1/2 cup rum, to taste





    In a heavy, nonreactive saucepan combine all ingredients except the rum and cook over medium-low heat, whisking constantly, until the sauce is thickened and coats the back of a spoon. Remove from the heat immediately; do not allow the sauce to boil. Add the rum, stir to combine, and allow to cool slightly. Serve warm with Banana Walnut Bread Pudding. (The sauce can be made up to 1 week in advance and stored, refrigerated, in an airtight container. Warm gently before serving.)

    * 2 c Chappati Flour

    Instructions:


    Put the flour in a bowl. Slowly add enough water so that you will be able


    to gather the flour together and make a soft dough. You may need about 2


    1/2 tablespoons less than a cup of water. Knead the dough for 7 to 8


    minutes or until it is smooth. Make a ball and put it inside a bowl. Cover


    the bowl with a damp dishcloth and set it aside for half an hour.





    If the dough looks very runny, flour your hands and knead for another few


    minutes. Form twelve equal balls and dust each with a little flour. Keep


    them covered.





    Set a cast-iron griddle or skillet to heat over a medium-low flame. Allow


    at least 5 minutes for that. Keep about a cup of dusting flour near you.


    Remove a ball of dough and flatten it between the palms of your hands. Dust


    it on both sides with flour. Roll it out, as thinly and evenly as you can,


    aiming for a 5 1/2 inch round. When the griddle is hot, slap the roti onto


    its heated surface. Cook for about a minute or until soft bubbles begin to

    1 package dry active yeast


    1 1/4 cups warm water (not over 110 degrees)


    2 3/4 cups unbleached all-purpose flour, plus additional for rolling


    1/4 cup wholle wheat flour or coarse rye flour

    2 teaspoons crushed fennel seed


    Olive oil, for brushing breads





    Combine the yeast and water in the bowl of an electric mixer. Let it rest until frothy, about 15 minutes. Using the paddle attachment, incorporate the flours into the yeast mixture. Beat in the salt and fennel. Switch to the dough hook and knead for 5 to 7 minutes. Remove the dough and place it into a lightly oiled bowl, turning to coat.     Beat lard with an electric mixer to aerate (approximately 2 minutes). Beat in small amounts of


    masa until all is incorporated into lard. Add a small amount of water or broth if needed.


    (This is a personal judgment call.) When masa is desired consistency, beat in salt.

    1 tablespoon chopped fresh chives or parsley leaves

    Preheat the oven to 400 degrees F.


    Heat the oil in a small skillet over medium heat. Add the onions and cook until tender, about 7 minutes.


    In a large bowl, add the milk and egg to the biscuit mix, stirring just until the mix is moistened. Fold in the onions and 1/2 cup of the cheese.


    Spoon the dough into a greased 8-inch round cake pan. Mix the onion salt into the melted butter and drizzle the mixture over the dough.     2 cups Bisquick


    1 stick butter, melted


    8 ozs. sour cream


    1. Mix together Bisquick, butter and sour cream.


    2. Place by teaspoonfuls into buttered minimuffin tins.


    3. Bake in a preheated 400潞F oven for about 15 minutes or until golden brown. Serve with your favorite jelly, jam or preserves. You won't need butter. Makes 12-18 minibiscuits.

    Simple White Bread





    We like homemade bread for breakfast....or anytime.......








    A very simple recipe:


    2 cups warm water


    2 packets active yeast


    5 cups of King Arthur's Artisan Bread Flour


    1 tablespoon sugar


    1 teaspoon table salt





    Proof the yeast in the water and sugar for ten minutes





    Mix two cups of flour with the salt in the bowl with the flat beater, add the two cups of water/yeast/sugar mix all at once





    once well blended stop, remove the flat beater, replace with the dough hook. Add the remaining cups of flour one at a time until well incorporated. Add the last cup a bit at a time until the dough is slightly sticky and is cleaning the sides of the bowl.





    Rise until double





    Punch down





    Form in to equal round loaves on a floured surface so that the dough is lightly covered with flour.





    Rise on a floured surface covered with a cloth until just doubled in size





    Cut a deep X in the top of each loaf.





    Bake in a 500 degree oven for 30 minutes or until well browned.





    Allow to cool.

    Years ago, most women rolled up their sleeves once or twice a week and


    kneaded loaves of bread to feed their families. They had no bread


    machines-just powerful arms. It was a relief when white breads started


    flooding supermarket shelves in the 1930s, but there's no comparison

    this soft, fresh loaf and the mass-produced variery. MAKES 1





    2 1/4 teaspoons (one 1/4-ounce package) active dry yeast 1 1/2 -2


    Tbsp fresh yeast


    1/4 cup warm water


    1 1/4 cups buttermilk, at room temperature or sour milk


    3 tablespoons sugar


    1/2 tablespoon salt


    6 tablespoons (3/4 stick) butter, softened or yellow crisco


    3 1/2 cups all-purpose flour, or more as needed about 5 cups





    1. Sprinkle the yeast over the water and set aside for about 5


    minutes,


    until bubbly.





    2. Meanwhile, combine the buttermilk, sugar, salt, and 3 tablespoons


    of


    butter in a large bowl. Stir in the yeast mixture. Beat in 3 1/4 cups

    You will need: 225g/8 oz. Self-raising flour,


    Pinch of salt,


    150g/5 oz. butter,


    100g/4 oz. caster sugar,


    50g/2 oz. currants.


    1 egg, beaten.





    Method:





    Sift the flour and salt into a bowl.


    Rub in butter finely.


    Add the sugar and currants together.


    Mix all together to a very stiff dough with beaten egg.


    Turn out on to a lightly floured board and knead gently until smooth.


    Roll out fairly thinly and cut out using a 5cm/2 in. plain round cutter.


    Transfer to a buttered baking tray, prick biscuits well with a fork.





    Bake in centre of a preheated oven, 180c or 350 f. or gas No.4 for about 12 to 15 minutes (or until pale gold in colour)





    Leave on tray for 2 to 3 minutes, transfer to wire cooling rack.

    CHOCOLATE CAKE


    coffee 11 fl.oz.


    salt 陆 tsp

    semisweet chocolate chips 2 cups


    flour 3陆cups


    yeast 1 tsp





    Cool the coffee to room temperature. This doesn't have the traditional shape of a cake, but it has the texture and taste. There's lots of oil in the chocolate - no additional is needed. The chips melt during baking.





    LEMON BREAD


    lemon 1


    juice+water 11 fl.oz.


    mace pinch


    salt 陆 tsp


    sugar 3 Tbsp


    olive oil 2 Tbsp


    flour 4 cups


    yeast 1 tsp





    Grate the rind from the lemon, squeeze the juice and top it up with water. Two tangerines, or a large orange, also work well, with the sugar reduced to 2 Tbsp. Don't try to save work by putting the whole fruit into a blender - the white part of the rind deadens the flavour. Use two oranges and replace the mace by 1 Tbsp sage to make a wonderful bread for stuffing.

    I use my bread maker quite often. I follow the recipes of 2 books I have at home, but I search the net too.

    Here are some of my favorites recipes:





    Cinnamon Buns


    1 cup water


    2 teaspoon skim milk powder


    1 egg, beaten


    2 tbsp butter


    3 teaspoon sugar


    1 1/4 teaspoon salt


    3 1/2 cup white flour


    1 teaspoon yeast





    Process dough, use 1/3 for a mini white loaf of bread. For Cinnamon buns, I roll rest of dough to about 1/2 inch, spread a thick layer of butter, and brown sugar over it, raisins/pecans optional. Sprinkle a good layer of cinnamon on top. Roll and slice into small Cinnamon buns. Place in a pan with more butter and sugar on bottom. Let it rise 45 minutes. Bake at 350F with bread for 20 minutes.





    Pretzels


    1 cup beer


    1 tbsp butter


    2 tablespoons sugar


    1 teaspoon salt


    2 2/3 cup white flour


    3/4 teaspoon yeast





    Process dough. Roll into a 14';x9'; rectangle cut into 18 - 14';x1/2'; strips. Gently roll each strip into a rope, Form into pretzels (curve ends of each rope to make a circle, cross ends at top, twist ends once and lay over bottom of circle). Place on greased baking sheets





    DO NOT LET RISE!





    Combine lightly beaten egg and 1 tablespoon water, brush on pretzels. Sprinkle with coarse salt or sesame seeds. (Or dip in butter and sprinkle with Cinnamon and sugar)





    Bake at 350 for 18 - 20 minutes.





    Milk and Honey Bread





    This is an easy bread to make with your bread machine, and it's a wonderful bread for sandwiches and toast.


    INGREDIENTS:


    1 cup plus 1 tablespoon milk


    3 tablespoons honey


    3 tablespoons melted butter


    3 cups bread flour


    1 1/2 teaspoons salt


    2 teaspoons active dry yeast


    PREPARATION:


    Add ingredients to the bread machine pan in the order recommended by your bread machine manufaturer.


    Use basic and medium crust settings.


    Makes 1 loaf.

    This isn't ';Awesome'; but it's a great easy bread recipe from the King Arthur Flour website. I've almost never had a bad loaf from it.





    Toast %26amp; Sandwich Bread


    Ah, sandwiches... the centerpiece of any picnic. Here鈥檚 a moist, soft bread that鈥檚 perfect for anything from pb%26amp;j to smoked salmon and capers





    2 teaspoons instant yeast


    2 tablespoons sugar


    1 cup lukewarm milk


    1 1/2 teaspoons salt


    3 cups King Arthur Unbleached All-Purpose Flour


    2 tablespoons butter, melted





    Bread Machine Method (1 1/2-lb. or larger machine): Place all of the ingredients into the pan of your bread machine, program the machine for Basic White Bread (or equivalent), and press Start.





    Manual/Mixer/Food Processor Method: In a large mixing bowl, combine all of the ingredients and mix for 2 minutes. Switch to the dough hook, and knead for 10 minutes. By hand, knead till you have a smooth, soft dough. Using a processor, process for 90 seconds.





    Transfer the dough to a lightly greased bowl, cover it, and allow it to rise about 1 hour, or till it鈥檚 doubled in bulk. Shape the dough into a loaf, and place it in a greased 8 1/2 x 4 1/2-inch loaf pan. Tent the dough with a proof cover or lightly greased plastic wrap, and allow it to rise for about 1 hour, or until it鈥檚 crowned 1 to 2 inches over the rim of the pan.





    Bake the bread in a preheated 350掳F oven for 35 to 40 minutes, or until it tests done (its internal temperature will read 190掳F on an instant-read thermometer). Remove the bread from the pan to cool. Yield: 1 loaf, 12 slices.

    here is my favourite low carb bread recipe





    Bread Machine Bread








    Ingredients:


    1/2 cup warm water (95-105掳F)


    1/2 cup heavy whipping cream


    1 Tablespoon oil


    1 egg, room temperature, beaten


    1/4 teaspoon salt


    1 cup plus 2 Tablespoons vital wheat gluten flour


    1/2 cup oat flour


    1/2 cup vanilla or unflavored whey protein powder


    1 pkg Rapid Rise yeast





    In a large bowl mix vital wheat gluten flour, oat flour, salt, and whey protein powder until well sifted together. Set aside.





    Heat cream to slightly warm; then mix with warm water and egg. Add oil to bottom of bread machine. Then add water/cream/egg mixture. Carefully add flour mixture so it 'floats' on top of liquid. Sprinkle yeast packet evenly across the top of flour. Set your bread machine according to directions for ';Rapid Bake'; (usually 2 hours) or whatever settings allow a full rise cycle but only one knead cycle.





    Entire Loaf: 60 grams net carbs.Does anyone out there have any good bread machine recipes for low carb bread?
    CARROT BREAD FOR BREAD MACHINE
