Wehave a defunct bakery which I'd like to re-open and make biscuits and short bread can any one help me with some real old home bake recipies like ma mother used to make?Recipes for short bread and biscuits?
Currant Biscuits
You will need: 225g/8 oz. Self-raising flour,
Pinch of salt,
150g/5 oz. butter,
100g/4 oz. caster sugar,
50g/2 oz. currants.
1 egg, beaten.
Method:
Sift the flour and salt into a bowl.
Rub in butter finely.
Add the sugar and currants together.
Mix all together to a very stiff dough with beaten egg.
Turn out on to a lightly floured board and knead gently until smooth.
Roll out fairly thinly and cut out using a 5cm/2 in. plain round cutter.
Transfer to a buttered baking tray, prick biscuits well with a fork.
Bake in centre of a preheated oven, 180c or 350 f. or gas No.4 for about 12 to 15 minutes (or until pale gold in colour)
Leave on tray for 2 to 3 minutes, transfer to wire cooling rack.

Petticoat tails - shortbread
225g plain flour
75g caster sugar
150g butter
Mix tyhe flour and sugar in a bowl, rub in the butter
Knead well to form a smooth paste
divide into two equal parts, shape, flatten into 2 x 18cm rounds approx 1cm thick
Mark top into protions, decorate edges and prick with fork
Place on greased tray
Bake for 30 mins at 325 f / gas 3 or 16 degrees c. or until patle and golden
Highlanders
125g plain flour
100g butter
50g caster sugar
50g ground rice
milk
demerara sugar
Cream the caster sugar and butter until light and fluffy
Add the flour and ground rice, mix well
roll into a thick sausage
Brush with milk and roll in demerar sugar
cut into slices - 15 - 20
Bake at 190/375 / 5 for 15 - 20 mins
Shortbread
Makes 10-12 shortbread
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
125g/4oz butter
55g/2oz caster sugar
180g/6oz plain flour
Method
1. Heat the oven to 190C/375F/Gas 5.
2. Beat the butter and the sugar together until pale.
3. Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/陆in thick.
4. Cut into rounds or fingers and sprinkle with a little extra caster sugar. Put on a baking sheet and chill for 20 minutes. Bake in the oven for 15-20 minutes until pale golden. Cool on a wire rack.
