Grate the rind from the lemon, squeeze the juice and top it up with water. Two tangerines, or a large orange, also work well, with the sugar reduced to 2 Tbsp. I don't recommend saving work by putting the whole fruit into a blender - the white part of the rind deadens the flavour. Use two oranges and replace the mace by 1 Tbsp sage to make a wonderful bread for stuffing.

Christmas Bread
The Swedish-Canadian original used local sun-dried berries and fruit - currants and citron are acceptable supermarket substitutes. Add them when kneading is almost complete. The original had almost twice the butter and sugar - it must have tasted great in a prairie sod house at 40 below, but is a bit much for my taste in a modern centrally-heated house, even at Christmas.
