I am after grain free bread and cake recipes?

I am finding it hard to find recipes for bread [and cake but to a lesser degree] that do not contain any grain product. There are many unleavened recipes. I would like to make a decent not heavy or gluggy loaf and wonder if it is possible. Appreciate any knowledge from readers.I am after grain free bread and cake recipes?
Whole Grain Bread





INGREDIENTS:





* 16 oz. pkg. hot roll mix OR 4 cups Homemade Mix plus 1 pkg. dry yeast


* 1 cup quick cooking oats


* 3 Tbsp. wheat germ


* 2 Tbsp. brown sugar


* 1-1/4 cups hot water


* 2 Tbsp. butter, softened


* 2 eggs





PREPARATION:


Grease a 2 quart casserole dish. In a large bowl, combine flour mixture from mix with the yeast from foil packet, oats, wheat germ, and brown sugar and mix well to combine. Add hot water, butter and eggs and beat until well mixed.





The batter will be sticky. Place in prepared casserole, cover, and let rise in warm place for 30-40 minutes.





Preheat oven to 350 degrees. Bake bread for 30-40 minutes, until bread sounds hollow when lightly tapped with fingers and bottom crust is golden brown. Immediately remove from casserole and let cool on wire rack.





-------------Whole Grain 7-Up Cake





Cake


1 cup light margarine, softened


1/2 cup shortening


3 cups sugar


1 teaspoon vanilla


1/2 teaspoon almond extract


3 eggs, room temperature


1/3 cup egg whites


1 tablespoon egg whites


3 cups whole wheat flour or brown rice flour


1/2 teaspoon salt


1 cup soda pop (7-Up)


Glaze


1/4 cup soda pop (7-Up)


1/2 cup sugar











1. Preheat oven to 300掳F Spray 10'; tibe pan with non-stick cooking spray. Lightly coat with flour.


2. Combine margarine, shortening, sugar, vanilla and almond extract with electric mixer. Beat 5 minutes until light and fluffy.


3. Gradually add eggs %26amp; egg whites, beating well after each addition.


4. In separate bowl, combine flour and salt. Add to margarine/sugar mixture alternately with 1 cup 7 UP, beating well after each addition.


5. Spoon batter into pan. Bake 1 hr 45 minute.


6. Cool in pan on rack 10 minutes, then remove from pan.


7. Make glaze: Stir together 1/4 c 7 UP %26amp; 1/2 c sugar in saucepan. Bring to a boil over medium heat. Boil 1 to 2 minutes until sugar is dissolved.


8. Use toothpick to poke holes in top of warm cake. Spoon glaze over cake %26amp; allow to cool.

Mixed Berry Whole-Grain Coffee Cake











3 tablespoons butter


1 cups quick-cooking oats


1/4 cup all-purpose flour


1/4 cup brown sugar


1 cup all-purpose flour


1 cup whole-wheat flour

1/4 cup vegetable oil


1 cup skim milk


1 tablespoon baking powder


1 teaspoon cinnamon


1/2 teaspoon salt


1 egg, slightly beaten


1 (12-ounce) bag frozen, unsweetened mixed berries, thawed and drained


(about 1 1/2-2cups frozen or 2 cups fresh berries)


1/4 cup chopped walnuts











Heat oven to 350 degrees. Grease 9-inch round cake or springform pan or 9 x 9 square pan. Mix butter, oats, 1/4 cup flour and brown sugar in small bowl with fork or pastry cutter until crumbly. Set aside. Combine flours, sugar, oil, milk, baking powder, cinnamon, salt and egg in large bowl. Beat mixture with wire whip or mixer 1- 2 minutes, until well blended. Stir in mixed berries. Spread half of the batter in pan and sprinkle 陆 of oat mixture on top. Add remaining batter and sprinkle with remaining oat mixture and chopped walnuts. Travel Bread


Gluten-Free Recipe


Ingredients:


1/2 cup potatoes, cooked and mashed


1/4 cup margarine or butter


1/4 cup sugar


Six eggs, separated


2 cups brown rice flour plus 2-tablespoons Soya


2 teaspoons GF baking powder


1 teaspoon baking soda


1 teaspoon cream of tartar


1/2 teaspoon salt


3/4 cup milk








Directions:


Heat and cook potatoes. Mash lumps.





Cream mashed potatoes with the butter and sugar.





Add egg yolks. Beat well.





Sift dry ingredients and alternately add to the mixture with milk.





Fold in egg whites, which have been beaten to hold soft peaks.





Pour mixture into an 8 x 4-inch greased pan.





Bake at 350 degrees for 1 hour.





Ingredients :





1 cup AM Amaranth Flour


1 1/2 cup AM Brown Rice Flour OR- Whole Wheat Flour


1 tbl Non-alum baking powder


1 tbl Sea salt (optional)


1 cup Milk soymilk or water


3 tbl Honey


2 tbl AM Unrefined Vegetable oil IF USING RICE FLOUR:


2 x Egg whites beaten





Method :


Mix dry and liquid ingredients separately; beat egg whites, then combine all ingredients. Pour batter into well-oiled 8'; x 4'; pan and bake at 350 F. about 45 minutes. Cool 10 minutes before removing loaf to rack.
I know you can buy soy flour for bread at most health food stores, they have recipes on the box.





I don't have a bread recipe but this flourless chocolate cake is like the ';death-by-chocolate'; you can get at some restaurants.





Flourless Chocolate Cake





8 oz good bittersweet chocolate, chopped


2 sticks (1/2 lb) unsalted butter


1 1/2 cups sugar


6 large eggs


1 cup unsweetened cocoa powder, plus additional for dusting





Put a rack in the center of the oven and preheat the oven to 350飩. Butter a 10 inch spring form pan, line bottom with a round of parchment or wax paper and butter paper.





Melt chocolate with butter in a medium metal bowl set over a saucepan of barely simmering water, stirring until smooth. Remove bowl from heat and whisk in sugar. Add eggs one at a time, whisking well after each addition. Sift cocoa powder over chocolate and whisk until just combined.





Pour batter into pan. Bake until top has formed a thin crust and a wooden pick or skewer inserted in center of cake comes out with moist crumbs adhering, 35 to 40 minutes. Cool cake in pan on a rack for 10 minutes, then remove side of pan. Invert cake onto a plate and reinvert onto rack to cool completely.





Dust with cocoa powder or 10X confectioners sugar.








Can be made up to 3 days ahead and kept in an airtight container at room temperature.
I dont think that is possible. Bread IS a grain product. With no grain, there is no bread.
