I need some great recipes without using bread, pasta, etc.?

I am under doc orders to stay away from them and I find myself not being able to cook any of my fav meals. Any suggestions that you've personally tried and liked. Please note: I am allergic to shellfish.I need some great recipes without using bread, pasta, etc.?
STEAK


6 cups arugula


4 (4-ounce) cooked steaks, sliced


1/3 cup thinly sliced red onion


1 green bell pepper, seeded and thinly sliced


1/4 cup fresh lemon juice


3 tablespoons olive oil


1 tablespoon honey mustard


1 teaspoon finely grated lemon zest


Salt and ground black pepper


1/2 cup shaved Parmesan (use a vegetable peeler to shave a block of cheese)





Arrange arugula on a serving platter. Top with steak slices, red onion and bell pepper.


Combine lemon juice, olive oil, honey mustard, and lemon zest. Season, to taste, with salt and black pepper. Toss with salad greens. Top with shaved Parmesan just before serving.





CHICKEN


1/4 cup extra-virgin olive oil, eyeball it


1 1/2 pounds boneless skinless chicken thighs, chopped into bite-sized pieces


1 onion, thinly sliced


3 cloves garlic, grated or chopped


1 cup shredded carrots


1 fresh bay leaf


1 teaspoon smoked paprika


1 teaspoon ground cumin


1 teaspoon coriander


Pinch ground cinnamon


Salt and freshly ground black pepper


3/4 cup chopped dried fruits - pick 1 or combine: figs, pitted dates, apricots, sultanas


1 lemon, zested and juiced


3/4 cup pitted mixed olives, chopped


4 cups chicken stock, divided


2 tablespoons butter


3 tablespoons pine nuts


1/4 cup slivered or sliced almonds


1 1/2 cups couscous


Handful flat-leaf parsley, chopped








Heat the extra-virgin olive oil in a deep skillet over medium-high heat. When the oil ripples add the chicken and brown 3 to 4 minutes on each side. Add the onions, garlic, carrots, bay leaf and season with spices, salt and pepper, cook 5 to 6 minutes. Stir the fruits into the chicken and vegetables, add the zest of the lemon, olives and 2 1/2 cups of stock. Reduce heat to low and simmer 10 minutes more. Sprinkle with lemon juice and turn off heat. Remove bay leaf.


While chicken simmers, melt butter in a sauce pot over medium heat. Add nuts and lightly toast for a couple of minutes. Add 1 1/2 cups stock and bring up to a boil then stir in couscous. Cover and let stand 5 minutes.





Serve chicken over couscous, or vice versa, and garnish with parsley.





(NOTE: If you can't have couscous, serve over mixed greens or with veggies)





FISH


4 teaspoons olive oil, divided


4 (5-ounce) sea bass fillets (or other white fish)


1 small onion, diced


1/2 cup white wine


1 cup canned low-sodium diced tomatoes, with juice


1/2 cup chopped pitted black olives


2 tablespoons capers


1/4 teaspoon dried crushed red pepper, optional


2 cups packed fresh baby spinach leaves


Salt and pepper





In a large nonstick skillet heat 2 teaspoons of oil over a medium-high heat. Add fish and cook until opaque in the center, about 2 1/2 minutes per side. Transfer the fish to a platter and tent with foil to keep the fish warm.


Heat the remaining 2 teaspoons of oil in the same skillet; add onion and saute for 2 minutes. Add the wine and cook until reduced by half, about 2 minutes. Add the tomatoes, olives and capers and crushed red pepper, if using, and cook for 3 minutes more. Stir in the spinach and cook until it is wilted, about 3 minutes. Season with salt and pepper. Spoon the sauce over the fish and serve.

';Spaghetti'; Squash


1 (3-pound) spaghetti squash, split in 1/2 lengthwise


1 recipe Roasted Garlic Pesto, recipe follows


1/4 cup Parmesan





Preheat oven to 350 degrees F.


Reserve half of the squash for another use. Place 1 spaghetti squash half, cut side down, on a nonstick baking sheet. Roast for 30 to 40 minutes or until tender. Remove flesh from skin with a fork. Toss with the roasted garlic pesto. Top with Parmesan and serve warm.





Roasted Garlic Pesto:


4 heads garlic


4 sprays olive oil cooking spray


2 cups fresh basil leaves


1 teaspoon pine nuts


Preheat oven to 375 degrees F. Cut tops off garlic. Lightly spray each with cooking oil spray. Wrap in aluminum foil and roast for 1 hour. Let cool before handling. Squeeze pulp from garlic into a food processor. Add basil and pine nuts and pulse until smooth.I need some great recipes without using bread, pasta, etc.?
Everyone needs some carbohydrates or else they risk ketoacidosis and possibly death...
I have a friend who us a celiac (someone who can't eat gluten,) so she can not eat any bread, pasta, etc. There are great gluten-free recipes online you can try. How about this site? http://www.csaceliacs.org/recipes.php
swiss steak


round steak, browned on both sides


2 garlic cloves 1 lg onion 1 lg gr. pepper or 2 small all diced


1 28oz can diced tomato and 1 8oz paste


place meat in 13x9 baking dish


mix all rest together and cover meat w/ mix


bake 350 2.5-3 hours till meat tender


serve with rice or tatos

Stir fried vegetables with a spicy sauce and a bit of chicken. Just have it like that and a nice sauce.





You could also make soup
Bless your heart! Did he caution against wheat? is rice off limits too? This could open up a whole lot of things. There is rice flour that can be used a dredging material and substitutes as flour in some recipes.

Stir fries of any meat and vegies with rice





Egg rolls with any stuffing
Fruits and vegetable, eggs, meat chicken etc


You need to be more specific about what you can't eat.
boneless skinless chicken breasts sauteed with veggies of your liking...you can find all sorts of recipes on the interent just put low fat recipes into a search engine
