What are some bread recipes that require batter, not dough? (e.g. banana bread)?

I really don't consider them ';bread'; more a cake Zucchini is another.What are some bread recipes that require batter, not dough? (e.g. banana bread)?
Tomatoe Pesto Bread:





Prep Time: 25 minutes


Cook Time: 45 minutes


Ingredients:


1 package active dry yeast


2 tablespoon sugar


1/4 cup warm water


3/4 cup milk, heated in saucepan


1/2 cup pesto


2 to 3 cups flour


1/2 teaspoon salt


1/4 cup finely chopped oil-packed sun-dried tomatoes


1 tablespoon melted butter


Preparation:


Combine yeast, sugar, water, and milk in a small bowl; mix well and let stand until bubbly, about 10 minutes. In a large mixer bowl, combine 1 cup flour and the salt; add yeast mixture, pesto and sun dried tomatoes. Beat until combined, then beat at medium speed for 3 minutes. Add enough remaining flour to make a stiff dough.


Cover dough and let rise until doubled, about 30-40 minutes. Preheat oven to 375 degrees F. Heavily grease a 2 quart casserole dish with unsalted butter or solid shortening.





Stir down batter then pour into prepared pan. Let rise until doubled, about 25 minutes. Bake for 40-50 minutes or until deep golden brown. Remove from pan and brush with melted butter; cool on wire rack until warm before slicing.





Oatmeal Batter Bread:





Prep Time: 25 minutes


Cook Time: 40 minutes


Ingredients:


2 to 2-1/2 cups flour


3/4 cup rolled oats


1 tsp. salt


1 pkg. dry yeast


1 cup water


1/3 cup honey


1/4 cup butter


1 egg


Preparation:


Grease an 8x4'; loaf pan. In a large bowl, combine 1 cup flour, oats, salt and yeast and mix well. In a small saucepan, heat water, honey and butter until very warm, about 120 degrees. Add to flour mixture along with egg, and beat for three minutes. Stir in additional 1 to 1-1/2 cups flour to make a stiff batter. Cover batter and let rise until light, about 25-30 minutes.


Stir down batter and place in prepared pan. Cover and let rise until batter reaches top of pan, about 15-20 minutes. Heat oven to 375 degrees. Bake bread for 35-40 minutes until loaf sounds hollow when lightly tapped. Remove from pan immediately and place on wire rack to cool. Makes one loaf

Zucchini Bread with


Cinnamon %26amp; Nutmeg





3 eggs


2 cups sugar


1 cup vegetable oil


2 cups grated zucchini


1 tsp vanilla


1 tbs cinnamon


grated Nutmeg, about 1/4 tsp


3 cups flour


1/4 tsp baking powder


2 tsp baking soda


1 tsp salt


1 cup chopped walnuts, optional


2 loaf pans





Preheat oven to 350 degrees. Grease pans.





Peel zucchini with potato peeler, grate.


Important to remove the natural liquid in the


zucchini. To do this, after grating place on


cutting board, with several paper towels,


press down on the zucchini, mix it around and


continue to blot with paper towels until very


dry. Set aside.





Beat on medium speed, eggs, sugar %26amp; oil. Add


zucchini, vanilla, cinnamon %26amp; nutmeg, mix until blended.





Add flour, baking powder, baking salt, salt


and mix until all flour incorporated, be careful


not to over mix. Stir in nuts(optional).





Divide batter among pans, bake for 1 hour.





Can freeze up to 3 months.








How about a Chocolate version? To make, omit baking powder, cinnamon and nutmeg, increase baking


soda to 1 tsp and melt 2 bars of unsweetenedd chocolate.


Follow directions above. It is delicious. Enjoy.





Banana Bread W/Crushed Pineapple

DIET CARROT BREAD





1 cup sugar


3/4 cup natural applesauce


2 eggs, slightly beaten


1 tsp vanilla


1 1/2 cup all-purpose flour


1 tsp baking powder


1 tsp baking soda


1 tsp cinnamon


1 cup raw carrots, shredded


1 cup golden raisins





In a bowl, mix sugar, applesauce, eggs and vanilla. In a smaller bowl


combine flour, baking powder, baking soda and cinnamon. Ad to


applesauce mixture with carrots and raisons. Bake in two buttered 5


3/4-by-3-by-2 1/8 inch loaf pans at 350 degrees for 40 to 45 minutes.











DIET SPICED BANANA BREAD





1 1/4 cup all-purpose flour


1/2 cup whole-wheat flour


1/2 cup sugar


2 tsp baking powder


2 tsp cinnamon


1 tsp allspice


1/2 tsp ginger


1/4 tsp salt


1 egg, beaten


2 bananas, mashed


3/4 cup unsweetened applesauce


2 tbsp canola oil


1/3 cup fat-free milk





Preheat the oven to 350 degrees. In a large bowl, combine the all-purpose


flour, whole-wheat flour, sugar, baking powder, cinnamon, allspice, ginger,


and salt.





In a medium bowl, combine the eggs, bananas, oil, and milk. Add the banana


mixture slowly to the flour mixture and mix until just combined. Don't


overbeat.





Spray a 9- by 5- by 3-inch loaf pan with nonstick spray. Dust the pan


lightly with flour. Pour the batter into the prepared pan.





Bake the banana bread for 45 to 50 minutes until a knife inserted in the


center comes out clean. Let the bread cool in the pan for 15 minutes, then


turn the loaf out onto a rack and cool completely.
HAWAIIAN PINEAPPLE BANANA BREAD


Yield: 2 Servings





3 c Flour


2 c Sugar


1 ts Baking soda


1 ts Cinnamon


3/4 ts Salt


1 c Pecans -- chopped


3 Eggs -- beaten


1 c Oil


2 c Mashed bananas -- (about 5)


2 ts Vanilla extract


1 cn Crushed pineapple -- (8


Oz)-- drained





In a large bowl, combine the flour, sugar, baking soda, cinnamon, and


salt; stir in pecans. In a separate bowl, combine remaining


ingredients; mix well. Pour wet mixxture into dry mixture, stirring


just until dry ingredients are moistened. Spoon batter into 2


greased and floured 8x4'; loaf pans. Bake for about 1 1/2 hours at


3500. Cool in pan for 10 minutes, then remove from pans. In Hawaii


they'd use macadamia nuts, but pecans or walnuts work just as well.














Very Cherry Nut Bread

2 1/2 cups all-purpose flour


1/2 cup granulated sugar


1/2 cup packed brown sugar


3 1/2 teaspoons baking powder


1/2 teaspoon salt


1 egg


1 1/4 cups milk


3 tablespoons cooking oil


1/2 teaspoon almond extract


1 cup maraschino cherries, well drained, coarsely chopped


2/3 cup almonds, chopped





Lightly grease a 9 x 5 x 3-inch loaf pan and set aside.





In large mixing bowl, stir together flour, granulated sugar, brown sugar, baking powder and salt.





In small bowl, stir together egg, milk, cooking oil and almond extract until well combined.





Add egg mixture to dry mixture all at once. Stir till just moistened. Fold in the maraschino cherries and chopped almonds. Pour batter into prepared pan.





Bake in a 350 degree F oven for 1 hour or until a wooden wooden pick inserted near center comes out clean. Cool in loaf pan on wire rack 10 minutes. Remove loaf from pan. Cool completely on the wire rack. Wrap and store overnight before slicing.

















Cheddar Cheese Quick Bread





2 cups flour


1 1/2 tsp. baking powder


1/2 tsp. baking soda


2 tsp dry mustard


1 cup sharp cheddar cheese, shredded


2 eggs


1 cup buttermilk


1/2 cup oil





Combine first 6 ingredients; set aside. Beat milk, oil and eggs


until well blended. Add to flour mixture; mix until moist. Pour into


a well greased loaf pan. Bake at 375 degrees for about 45 minutes.


Cool for 10 minutes. Invert on rack and cool.
