I want your favorite banana bread recipes!?

I'm on a quest to find the best banana bread recipe. I've made about 6 or 7 different kinds and so far I'm not satisfied yet... Please provide your most favorite recipe. Please no links to websites with banana bread recipes, chances are I've made them already... I want ones that have been tried %26amp; true by *you*!I want your favorite banana bread recipes!?
I'm at work, and don't have the details of the recipe on me, but it sounds like you've got a good base recipe as a starting point anyway. Here are some changes I've made, and ended up with a banana bread I love! Good luck, and enjoy! :)

--I let the bananas ripen fully, then I put them in the freezer. They can stay there for days, weeks, months, whatever, until I'm ready to make it. Then I let them thaw in the fridge overnight before mashing them for the banana bread. Something about freezing them brings out the natural sweetness of the banana. I end up using less sugar.

--And speaking of sugar...I use mostly brown sugar instead of white.

--I'm a cinnamon fiend! So I always add plenty to my recipe. Same with vanilla...my basic recipe called for 1 tsp, so of course I put in 2. LOL

--I always bake with olive oil. Sounds funny, and may even smell a little funny prior to baking, but I swear it makes everything taste more savory. Also, for my banana bread, the recipe I use originally called for 1/2 cup oil. I split it, using 1/4 cup olive oil, and 1/4 butter (not margarine).

--I typically use soy milk in many of my recipes, simply because that's what I have around. But I do think sometimes it helps things taste creamier. I know it definitely makes a difference in my quiche.I want your favorite banana bread recipes!?
