Does anyone have any good HOMEMADE banana bread recipes?

Here is my favorite recipes, quick and easy.....





Banana Nut Bread





1/4c. butter, softened


3/4c. sugar


2 eggs


3/4c. mashed ripe bananas (about 2 medium)


1/2c. sourcream


2 -1/4 cups all-purpose flour


1 tsp. ground cinnamon


3/4 tsp. baking soda


1/2 tsp. salt


1/2 c. chopped walnuts (i use 1/4 c. not too crazy for walnuts)





1) In a large mixing bowl, cream the butter and sugar. Add eggs, one at a time, beating well after each addition. Beat until light and fluffy.


2) Stir in bananas and sourcream. Combine the flour, cinnamon, baking soda, and salt. Stir into banana mixture just until moistened. I use the hand mixer to stir everything.


FOLD in nuts.


3) Transfer to a greased 8-in. x 4-in. x 2-in. loaf pan.


Bake at 350' for one hour or until toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to cool completely.





* Banana Chip Bread: Fold in one cup semisweet chocolate chips or vanilla chips along with the walnuts. Bake as directed.Does anyone have any good HOMEMADE banana bread recipes?

Easy Banana Bread:

20 servings





3 1/2 cups flour


3 cups sugar


1 1/2 teaspoons baking soda


1 1/2 teaspoons salt


1 teaspoon baking powder


1 teaspoon cinnamon


1 teaspoon vanilla


4 eggs


2/3 cup water


1 cup vegetable oil


2 cups bananas, mashed


1 cup pecans, chopped





1. Preheat oven to 350 degrees.


2. Combine ingredients in large mixing bowl.


3. Pour batter into 2 prepared bread pans or 1 prepared bundt pan.


4. Bake for 1 hour or until firm and golden brown.


5. Cool on wire rack for at least 15 minutes before turning bread out onto tray.
1/2 cup butter 2 eggs, 2 cups flour,1/2 tsp.salt


1/2 cup chopped nuts,1 cup sugar,1 cup mashed bananas(2 or 3),1 tsp baking soda,1/3 cup sour milk


Cream butter and sugar together.Add eggs and bananas,blend well.Sift flour,baking soda and salt together.Add to the cream mixture alternately with the sour milk,beating.Smooth after each addition.Stir in nuts.Pour batter into greased loaf pan.Bake at 350 for 60 minutes.Remove from pan and cool on a wire rack.


To make the sour milk add a teaspoon of vinegar or lemon juice.Also you can leave out the nuts if desired.
Banana Banana Bread





2 cups all-purpose flour


1 teaspoon baking soda


1/4 teaspoon salt


1/2 cup butter 3/4 cup brown sugar


2 eggs, beaten


2 1/3 cups mashed overripe bananas


(I put bananas that are 鈥榯urning鈥?into the freezer until I鈥檓 ready to bake with them.)





Directions


1 Preheat oven to 350 degrees F Lightly grease a 9x5 inch loaf pan.





2 In a large bowl, combine flour, baking soda and salt.


In a separate bowl, cream together butter and brown sugar.


Stir in eggs and mashed bananas until well blended.


Stir banana mixture into flour mixture; stir just to moisten.


Pour batter into prepared loaf pan.





3 Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
cream four ounces of butter with same of sugar, blend in two eggs and fold in six ounces of self raising flour. add two chopped bananas and put mixture in a cake tin. cook at gas mark six for about 40 mins or until risen and set. voila!
Sorry, I don't have a bread recipe...but If you like bananas I have a really good banana bar recipe. :)





Ingredients:





BARS:


1 1/2 cup sugar


1 cup flour


1 cup fat-free sour cream


1 cup oatmeal/quick oats


1/2 cup soften margarine


1 tsp. salt (optional)


2 eggs


1 tsp. baking soda


1 1/2 cup bananas





FROSTING:


8oz. low fat cream cheese


2 tsp. vanilla


1 1/3 cup powdered sugar


1/2 cup soft margarine


1 tsp. vanilla








Preparation:





Mix all bar ingredients together with a mixer.





Spread in grease 9 x 13 pan.





Bake for 25 minutes at 350 F or until golden brown


and pulled away from sides of pan.





Test with toothpick like a cake.





Allow to cool at least two hours.








Cream together all ingredients for frosting and


spread on cooled bars.





Cut in desired size and serve or cover and refrigerate


for later.

Ha! I have 5 loaves in the oven right now! (we had ALOT of old bananas). I just use the recipe in my ancient Betty Crocker.
