I need your best vegan bread recipes, can you help?

OLIVE FOCCACIA


It's great with the specified olives but I like using minced garlic, jalapenos, and sliced black olives. I usually make a double recipe too because this won't come out that large.





INGREDIENTS





About 2 cups bread flour


3/4 cup warm water


1 T active dry yeast


1 t sugar


1/2 t salt


2 T olive oil


1/2-3/4 cup kalamata olives


1/2-3/4 cup black olives





METHOD


Pit and coarsely chop the olives. Set aside.


Warm water to 100F-110F (35C-45C). Dissolve sugar in water. Add yeast to water and let stand until yeast proofs (rises to surface).





Stir in 1 cup of flour and salt to the yeast mixture. Add rest of flour, gradually kneading into a soft bread dough (I use a Kitchenaid with a dough hook for this).





Add olives and knead to distribute them. I do this by hand - it will seem difficult and messy at first. Use enough flour and work at it until the dough reforms into a cohesive ball.





Put the olive oil into a clean bowl, add the dough ball and coat it with the olive oil. Cover and put in a warm place to rise (I use both Saran wrap and a towel).





When doubled, turn out onto a sheet pan. Stretch and use your fingertips to press it out to (very roughly) 13 x 9 inches (33 x 23 cm). The dough will be dimpled from your fingers and maybe 1/4-1/2 inch (7-13 mm) thick. Scrape all the olive oil over the dough and/or into the pan.





Cover and put in a warm place to rise. When roughly doubled, put in 400F/205C oven and bake until done (medium to dark brown on top and hollow sounding when tapped on bottom, maybe 20 minutes).I need your best vegan bread recipes, can you help?

I have not tried these recipes. You can also use substitutes for eggs and milk in your regular recipes (like 1 TBSP ground flax seeds in 3 TBSP hot water for 1 egg and soy milk for milk).





Best Vegan Banana Bread





Most banana bread recipes are saturated with butter and sugar. This one uses a small amount of canola oil instead - which is much better for your heart - and honey, which of course means lots of flavor. Don't use regular whole-wheat flour. It is too heavy for this recipe. Look for whole-wheat pastry flour instead.

1 loaf

3 very ripe bananas


1/2 cup honey


3 tablespoons canola oil, plus a little more for oiling the loaf pan


1 teaspoon pure vanilla extract


1 1/2 cups whole wheat pastry flour


1 1/2 teaspoons baking soda


1/4 teaspoon salt


3/4 cup chopped walnuts or pecans





1. Heat the oven to 350 degrees. Lightly oil a loaf pan.


2. Mash the bananas and mix with the honey, canola oil and vanilla extract.


3. Stir together the whole wheat pastry flour, baking soda and salt. Add the nuts.


Blend the two mixtures and spoon into a lightly oiled loaf pan. Bake for 40 minutes, or until center is set.

Variation-


I added 1 cup diced strawberries so I think I should have decreased the amount of honey. I already only added 3/4 cup but maybe 1/2 cup would be better suited to my taste. Otherwise, lovely texture- light, not too moist not too dry just right!!

Flax Bread (vegan)





1 1/8 cups water


1/4 cup unflavoured soy milk


2 TBSP canola oil


2 TBSP olive oil


3 TBSP dry sweetener (I use sucanat for this)


2 1/4 tsp or 1 package active dry yeast


1 tsp salt


2 TBSP flax seeds, ground


2 TBSP flax seeds, whole


2 cups U.S. bread flour or Canadian all-purpose flour


1 cup whole wheat flour


1 TBSP gluten (optional)





1. Place all ingredients in bread machine according to the manufacturer's instructions (e.g. wet %26gt; dry %26gt; yeast.





2. Choose Basic or Whole Wheat/Grain cycle, 1 1/2 pound loaf, regular or medium crust and press start.





3. When done, remove from pan and cool completely on rack before slicing or storing.

VEGETABLE ESSENE BREAD (raw)





Soft (pastry) wheatberries


Parsley


Celery


Red bell pepper


Carrot, grated


Caraway seeds


Scallion





1. Soak (15 hours), drain and sprout (1-2 days) the wheatberries until little tails come out.


2. Put all ingredients through a Champion (or equivalent) juicer.


3. Mold and place onto dehydrator tray.


4. Bake in dehydrator for 12-24 hours.


5. Refrigerate or freeze until ready to use.





HELPFUL HINTS:


Try slicing and toasting for easier digestion; try sprouting rye for variety.

veganomicon is really good cook book, for good bread recipes. I would write my bread recipes, but I am really very bad at writing recipes, I usually forget some ingredients! like flour lol heheheh!
