Texas Flour Tortillas

Ingredients:

Two cups of all-purpose flour (can make them whole wheat by substituting one cup of whole-wheat flour for white flour)

1 1/2 teaspoons of baking powder

1 teaspoon of salt

2 teaspoons of vegetable oil

3/4 cups of warm milk

Method:

Mix together the flour, baking powder, salt and oil.

Slowly add the warm milk.

Stir until a loose, sticky ball is formed.

Knead for two minutes on a floured surface. Dough should be firm and soft.

Place dough in a bowl and cover with a damp cloth or plastic wrap for 20 minutes.

After the dough has rested, break off eight sections, roll them into balls in your hands, place on a plate (make sure they aren鈥檛 touching) and then cover balls with damp cloth or plastic wrap for 10 minutes. (It鈥檚 very important to let the dough rest, otherwise it will be like elastic and won鈥檛 roll out to a proper thickness and shape.)

After dough has rested, one at a time place a dough ball on a floured surface, pat it out into a four-inch circle, and then roll with a rolling pin from the center until it鈥檚 thin and about eight inches in diameter. (If you roll out pie crusts you鈥檒l have no problem with this.) Don鈥檛 over work the dough, or it鈥檒l be stiff. Keep rolled-out tortillas covered until ready to cook.

In a dry iron skillet or comal heated on high, cook the tortilla about thirty seconds on each side. It should start to puff a bit when it鈥檚 done.

Keep cooked tortillas covered wrapped in a napkin until ready to eat.

Can be reheated in a dry iron skillet, over your gas-burner flame or in the oven wrapped in foil.

While you probably won鈥檛 have any leftovers, you can store in the fridge tightly wrapped in foil or plastic for a day or so.

Makes eight tortillas.

Onion Cheese Bread

鈥?3/4 cup finely diced onion

鈥?1/2 cup milk

鈥?1 egg, beaten

鈥?1 1/2 cups biscuit mix

鈥?1 cup shredded sharp Cheddar

In a large bowl, add the milk and egg to the biscuit mix, stirring just until the mix is moistened. Fold in the onions and 1/2 cup of the cheese.

Spoon the dough into a greased 8-inch round cake pan. Mix the onion salt into the melted butter and drizzle the mixture over the dough. Sprinkle the bread with chives or parsley and bake for 15 minutes. Top the bread with the remaining 1/2 cup cheese and bake until the bread is cooked through and the cheese top golden, about 5 minutes longer, Cut the bread into wedges and serve warm with butter
Yeastless Bread/Buns

Ingredients:

2 cups all purpose flour

2 tablespoons whole wheat flour

2 heaping teaspoons baking powder

1 teaspoon vegetable shortening

l/2 tsp. salt

Cut shortening into dry ingredients.

Mix one beaten egg, I cup plain low fat yogurt, 2 tablespoons honey. Slowly combine egg and

honey mixture into dry ingredients. Beat well with spoon. Mixture will be dry. Form into loaf or 6

buns. Make diagonal slices across top to prevent cracking. Bake buns at 350 degrees for

approximately 20 minutes. Bake loaf at 350 degrees for approximately 25-30 minutes.

Note: These are great for hamburger buns. You may find that the rest of the family wants one of these too.
Sure! You can try pita bread or naan (which I personally like better than pita...it's softer...). Also try quick breads. They contain other leavening agents, but not yeast. Try searching Allrecipes.com. People rate and review recipes so you can find one that's really good. You can also do an ingredient search with the ingredients you have. It's awesome!
Look up biscuit recipes. Made with baking powder. also, tortillas are unleavened. Cornbreads are made with baking powder instead of yeast, too. Yogurt has yeast in it, I think. When milk ferments, doesn't a yeast form? Maybe not since it is a cure for yeast. Oops, scratch that.
Just look up ';unleavened bread recipes'; on google. There are millions of them and you can pick your favorites. Also, you can make sweet breads such as banana or zucchini breads as they don't call for yeast.
Most sweet breads use baking powder or baking soda instead.

Search for recipes like banana or zucchini or raisin bread.
