Apple Walnut Bread





';There are plenty of apples and nuts in this yummy fruit bread. It's great almost any time of the day.';


Original recipe yield: 2 - 9x5 inch loaves.


Prep Time:20 Minutes


Cook Time:1 Hour 10 Minutes


Ready In:1 Hour 30 Minutes

INGREDIENTS:


3/4 cup vegetable oil


1/4 cup applesauce


3 eggs


1 3/4 cups white sugar


1 teaspoon vanilla extract


2 cups all-purpose flour


1 cup whole wheat flour


1 teaspoon ground cinnamon


1 teaspoon baking soda


1 teaspoon salt


3 cups peeled, cored and cubed apples


1 cup chopped walnuts

DIRECTIONS:


Preheat oven to 300 degrees F (150 degrees C). Lightly grease two 9x5 inch loaf pans.


In a large bowl, stir together oil, applesauce, eggs, sugar and vanilla extract. In a separate bowl, sift together flour cinnamon, baking soda and salt. Gradually stir flour mixture into wet ingredients, mixing just until combined. Fold in apples and walnuts. Pour batter into prepared pans.


Bake in preheated oven for 70 minutes, until a knife inserted in the center of a loaf comes out clean.








Chocolate Chip Cookies





1 cup sweetened flaked coconut


1 cup chopped walnuts or pecans


2 1/2 cups all-purpose flour


1 teaspoon baking soda


1/2 teaspoon baking powder


1/2 teaspoon kosher or coarse salt


3/4 cup dark brown sugar, firmly packed


3/4 cup granulated sugar


1 cup butter, softened


2 large eggs


2 teaspoons vanilla extract


2 cups semisweet chocolate chips


Preheat oven to 375*F (190*C).


To toast the coconut and walnuts or pecans, spread each out onto a separate baking sheet. Toast in the 375*F (190*C) oven until they're golden, stirring each frequently. This takes just a couple of minutes. Watch closely, as they will burn easily. Set aside to cool.


In medium bowl whisk together the flour baking soda, baking powder, and salt, mixing well. Set aside.


Cream sugars and butter in a large bowl using an electric mixer at medium speed until texture is fluffy and light in color. Add eggs and vanilla; continue to beat an additional 3 minutes or until creamy textured.


By hand, stir in flour mixture until just mixed; gently fold in the chocolate chips, toasted coconut and walnuts.


Drop by tablespoonfuls onto parchment-lined or non-stick baking sheets, 2-inches apart.


Bake in the upper of the oven for 10 to 12 minutes, or until lightly browned, turning the baking sheet around halfway through the baking time to allow even baking of the cookies.


Transfer cookies to wire racks to cool. Store in tightly sealed container.


Makes 4 dozen cookies.

My wife makes these yummy peanut butter cookies. Mix 1 cup peanut butter, 1 cup sugar, and 1 egg. Roll into balls and flatten with a fork dipped in water. Bake at 350 degrees for about 8-10 minutes. Enjoy!Any good cookie or bread recipes?

Magic Mango Bread





INGREDIENTS:


2 cups all-purpose flour


2 teaspoons baking soda


1/2 teaspoon salt


2 teaspoons ground cinnamon


1/2 cup butter, softened


1/2 cup vegetable oil


1 1/2 cups white sugar


3 eggs


1 teaspoon vanilla extract


3 cups peeled, seeded and chopped mango


1/2 cup raisins


1/2 cup chopped walnuts


1/2 cup shredded coconut





DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.


In a large bowl, sift together flour, baking soda, salt and cinnamon. In a large bowl, beat together the butter, oil and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla. Blend this mixture into the flour mixture; just to combine. Fold in the mango, raisins, walnuts and coconut; mixing just enough to evenly combine.


Let stand for 20 minutes then bake in preheated oven for 50 to 60 minutes or until a toothpick inserted into center of the loaf comes out clean.

Peach Bread





INGREDIENTS:


3 eggs


2 cups white sugar


2 teaspoons vanilla extract


1 cup vegetable oil


2 cups diced canned peaches, drained


3 cups all-purpose flour


1 teaspoon baking powder


1 teaspoon salt


1 teaspoon baking soda


3 teaspoons ground cinnamon


1/2 cup chopped walnuts (optional)





DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 x 4 inch loaf pans.


In a large bowl, beat the eggs lightly. Blend in the sugar, oil, and vanilla. Add flour, baking powder, baking soda, salt, and cinnamon; mix just to combine. Stir in the peaches and nuts. Pour batter into prepared pans.


Bake for about 1 hour, or until a tester inserted in the center comes out clean.

Alabama Cookies


INGREDIENTS:


1 cup shortening


1 cup sugar


1 cup brown sugar firmly packed


2 eggs


1 tsp. vanilla


1-1/2 cups flour


1 tsp. salt


2 cups regular oats


2 cups chopped pecans


1 cup Rice Krispies


1 cup flaked coconut


PREPARATION:


Cream shortening, gradually add sugars, beating well at medium speed of mixer. Add eggs and vanilla, beating well. Combine flour and salt, add to creamed mixture, mixing well. Stir in oats and remaining ingredients.


Drop dough by heaping teaspoons onto greased cookie sheets. Bake at 325掳 for 10 to 12 minutes. Let cool slightly on cookie sheets, remove to wire rack to cool completely.


Makes about 6 dozen cookies.





Cherry and Nut Cookies





INGREDIENTS:


1/2 cup shortening


1/4 cup butter, room temperature


1 teaspoon vanilla


1/2 cup granulated sugar


1/2 cup brown sugar


1 egg


1/2 cup chopped pecans or walnuts


1/4 cup maraschino cherries, finely chopped


2 cups flour


1/2 teaspoon baking soda


1/2 teaspoon salt


1/2 teaspoon cream of tartar


PREPARATION:


Place shortening, butter, vanilla, sugars, and egg in a bowl and beat. Add nuts and cherries; mix well. Sift together dry ingredients; mix about half of the sifted mixture into the batter. Add remaining sifted mixture; knead dough with hands until smooth. Pack firmly and shape into two 2 by 2-inch bars. Wrap bars in waxed paper. Chill until firm. Cut in 1/8-inch slices and place on ungreased baking sheet. Bake at 400掳 for 6 to 8 minutes.


Makes about 5 dozen





Pineapple Macadamia Nut Cookies





INGREDIENTS:


1/2 cup shortening


1/2 cup sugar


1/2 cup light brown sugar, packed


1 egg


1/2 teaspoon vanilla


2 cups flour, stir before measuring


1 teaspoon baking powder


1/2 teaspoon salt


1/2 cup chopped macadamia nuts


1 cup (8 ounce can) crushed pineapple, undrained


PREPARATION:


Cream shortening and sugars; beat in egg and vanilla. Sift together dry ingredients; add to creamed mixture alternately with pineapple. Fold in chopped macadamia nuts. Drop by teaspoonfuls 4 inches apart onto greased baking sheets.


Bake at 350掳 for 15 minutes, or until set and lightly browned.

The most I baked is Cinnamon Roll.
I have some cookie recipes which is healthy and nice to eat you can try it.





Chocolate Chip Cookies


Add to a mixing bowl and beat until fluffy.





1/2 C. butter





1/2 C. crisco





3/4 C. white sugar





3/4 C. brown sugar





Add:





2 eggs





Mix well and add:





2 1/2 C. flour





1 t. baking soda





1 t. salt





1 1/2 t. vanilla





2 T. water





Blend well.





Add:





1 1/2 C. chocolate chips





1 C. pecans





Stir in. Cookies are now ready to bake. Drop by rounded Tablespoons onto an ungreased cookie sheet.





Bake at 350掳F. for 10-11 minutes. Let stand for 2 minutes after baking and remove to wire racks to cool.





Makes 36 cookies

Brown Sugar Cookies

Ingredients:





1 1/4 c. light brown sugar, firmly packed


1/4 c. water


3 T. honey


1 large egg


2 1/3 c. all-purpose flour


1 c. finely chopped pecans, almost grounded


2 1/2 tsp. cinnamon


1 tsp. baking soda


1 tsp. ground allspice





Directions:





* Preheat oven to 375 degrees. In a large mixing bowl, combine first 4 ingredients. Beat on high speed until well combined.





* In another bowl, combine remaining dry ingredients and stir. Add dry mixture to sugar mixture and blend until well combined..





* Drop cookies onto greased baking sheet by teaspoonfuls, 1 1/2'; apart. Bake for 10-12 minutes, until cookie edges are lightly browned.





* Remove cookies from oven and let cool slightly. Place on cookie racks and let set for a few hours before eating. Store in an airtight container.





Makes about 3 dozen cookies.





EASY BANANA BREAD


Banana Bread I

INGREDIENTS:


1 1/2 cups all-purpose flour


1 teaspoon baking soda


1/2 teaspoon salt


1 cup white sugar


2 eggs, beaten


1/4 cup butter, melted


3 bananas, mashed

Grease and flour two 7x3 inch loaf pans. Preheat oven to 350 degrees F (175 degrees C).


In one bowl, whisk together flour, soda, salt, and sugar. Mix in slightly beaten eggs, melted butter, and mashed bananas. Stir in nuts if desired. Pour into prepared pans.


Bake at 350 degrees F (175 degrees C) for 1 hour, or until a wooden toothpick inserted in the center comes out clean.

Vanilla Sugar Cookies





What you need:





2 1/2 cups of all- purpose flour


1 teaspoon of baking powder


Pinch of salt


1 cup of butter, at room temperature


1 cup of granulated sugar


2 large egg yolks


1 1/2 teaspoons vanilla extract


Granulated sugar for sprinkling


What you do:





1. Combine the flour, baking powder, and salt.


2. In a large bowl, cream the butter and sugar. beat in the egg yolks. Beat in the vanilla extract. Gradually blend in the dry ingredients. Cover and chill for one hour.


3. Preheat the oven to 375 degrees. Lightly grease 2 baking sheets.


4. On a floured surface, roll out the dough to a thickness of 1/4 inch. using a 2-inch cookie cutter, cut out cookies and place 1 inch apart onto the prepared baking sheets.


5. Bake for 10-12 minutes, until lightly colored. Sprinkle granulated sugar over the hot cookies and transfer to wire racks to cool.
